Chicken Zucchini Bake with Bacon

- 4 chicken breasts thinly sliced
- 0.5 oz dry Ranch seasoning (½ packet)
- 1 zucchini thinly sliced
- 6 strips bacon cooked, drained, chopped
- ½ cup Mozzarella cheese shredded
- ½ cup Parmesan cheese shredded
Instructions
- Heat oven to 375 F.
- Add 4 chicken breasts to casserole dish.
- Sprinkle the chicken with dry Ranch seasoning mix.
- Top with sliced zucchini and chopped cooked bacon.
- Top with shredded Parmesan and Mozzarella cheeses.
- Bake uncovered for about 20 minutes.

- Allow the chicken rest in the casserole dish. It will continue cooking as it rests for 5-10 minutes.
Notes
- Use regular chicken breasts or thinly sliced chicken breasts. If your chicken breasts are large, slice each one in half horizontally. By doing this, you can make 2 thinly sliced chicken breasts out of each large chicken breast.
- The chicken should be cooked through in about 20 minutes. The actual time depends on your oven. All ovens are different. It also depends on the thickness of your chicken breasts. Thin chicken breasts will cook faster.
- The chicken is cooked through when it's no longer pink in the center.
- When broiling, check often. Make sure the cheese doesn't burn too much on top of the chicken.

I followed this recipe to the letter. The flavors were really good but I thought it was too dry even though I had the temperature right about the chicken.. Is it juicy for everyone else?
Julia
Just reduce the cooking time slightly the next time.

Can’t wait to try this, I think I will slice the chicken so it will cook thoroughly, sounds so good, Thanks for the recipe, I’ll let you know how it turned out!

I loved this the first time I cooked it. I used real bacon pieces so it was even quicker & still very tasty. Gave my mom recipe she loved it, second time she used zesty ranch she saud it was awesome. Tonight I'm going to add some mushrooms in.
Julia
Jackie, I am so glad you've enjoyed this recipe! Zesty ranch sounds delicious with chicken! Mushrooms are a great addition, too!

20 min. For chicken? I don't think so.
Mary Abbey
Exactly...I cooked it covered for 30 minutes...then removed the cover and cooked for 15 more minutes. Turned out perfect.

Ok, I’ve had my eye on this recipe for weeks and tried it tonight. First of all, there is NO WAY you can bake a chicken breast at 375° for 20min and it be cooked through. Maybe with chicken tenders? NOT with any decent cut of chicken.
That said, I checked at 30 mins and it wasn’t even CLOSE to cooked and I’m using smaller to medium sized breasts.
I doubled up on the ranch seasoning and popped the chicken and zucchini ONLY in the oven. At about the 45min mark, it was about done cooking through. Once I saw that, I smothered bacon, cheese then more bacon. Cooked another 5-7min. Put the broiler on and let it broil for 3-4min then let it rest. The entire process was right at an hour.
Aside from this, the dish itself is great! I suggest doubling up on the ranch. When the chicken cooks, water will form in the dish and the seasoning will run to the bottom. Can’t hurt to give it more flavor! 😉

I would use thinly sliced skinless, boneless chicken breasts for this recipe.

Chicken was raw after 20 min. Guess my breasts were to thick. Putting back in for 15 more minutes... had to cover BC the cheese was already browned
