Perfect recipe for those nights when you don't have much time on your hands to fiddle with too many complicated ingredients.  This recipe is very similar to my popular broccoli bacon cheddar chicken. Baked chicken recipes these days often include some sophisticated ingredients and complicated cooking techniques, but not here.  It's a KETO friendly, low-carb, and gluten free recipe.

This Bacon, Creamy Cheese, Cheddar Chicken is simple and delicious, with the minimum prep, and everything is baked in 30 minutes, just like in this ranch chicken bake!  And, if you want to make your chicken bake with ham instead, you can make ham and cheese chicken.

And, in all of these recipes you use good old casserole dish.

    Substitutions

    • The recipe uses chicken breasts. You can also use skinless boneless chicken thighs and follow the recipe as is.
    • The recipe uses shredded Cheddar cheese. You can use also use Colby Jack cheese (combination of Colby cheese and Monterey Jack cheese).

    Cooking tips

    • Use small chicken breasts. If you purchased large chicken breasts, slice each one in half horizontally, to make it thinner. Or, purchase thinly sliced chicken breasts.
    • The cooking time depends on the thickness of your chicken breasts. The thinner the chicken breasts are, the quicker the dish will cook. On average, the chicken should be done in 20-30 minutes.
    • Bake the chicken uncovered, so that the cheese on top gets crispy.

I really want to try this but as a single person just cooking for myself can it be frozen in portions either before or after cooking.

Hi Ann! Even though I don't recommend freezing cheeses and cream, if you do have leftovers, you can freeze this AFTER COOKING (once it's cooled off).

Heather, my most important tip would be to make sure that the chicken is completely thawed (if using frozen chicken) before even starting this recipe. And, do use paper towels to pat dry the raw chicken before using in in this recipe.

Also, if using refrigerated chicken, remove it from the fridge 30 minutes prior to starting the recipe and do pat it dry with paper towels.

This was a quick meal after my son’s football game tonight, and they loved it! I used the ingredients, but not the measurements so I can’t say how it was following the recipe exactly, I added some herbs to the chicken when I seasoned. Thank you for sharing!

I enjoyed the recipe very much and so did my kids. After dinner my daughter's both told me it was too much cream cheese for their liking. I was fairly surprised and didn't think they would have even one complaint about it. I guess I'll cut back on the cream cheese next time. I am having a hard time figuring what pairs well as a side.

Randall, this recipe will definitely work well even if you reduce the cream cheese amount in half.
You can serve this with baby new potatoes. Or, any roasted veggies: asparagus, carrots, broccoli.
Or, serve this over fine pasta, such as angel hair pasta or spaghetti.

Will the bacon burn since you pre cook it before putting it in the oven?

Kristin, no, it will not burn. You might save a few pieces of sliced bacon and add it on top of the chicken towards the end of baking time for presentation purposes.
