First, I want you to know that my wife and I are devoted Julia’s Album fans. I do most of the cooking in our home, and our evening meals often come straight from your one-pot recipes. Not only are they incredibly delicious, they’re also healthy — which means a lot to us.
That said, I’m still trying to solve the mystery of how your prep times are always about a quarter of mine. I may need to hire a sous chef just to keep up!
We’re preparing for a visit from friends and I’m looking forward to making one of our favorite Julia dinners: the Grilled Salmon (Best Marinade). You once suggested a coconut cilantro-lime rice as a side, but I haven’t been able to find the recipe. We love your cilantro-lime rice and thought the coconut version would pair beautifully with the salmon and salsa.

And haha about the prep times — I promise, it’s mostly practice (and must be a little bit of “food blogger speed mode”). When I’m cooking, I’m usually racing the clock because I have to photograph everything before the light disappears, so I’ve gotten very fast at chopping over the years!
But in a normal kitchen, at a relaxed pace, it’s completely normal for it to take longer — and honestly, that’s how it should be!
To make coconut rice: In a medium saucepan, combine 1 1/2 cups of jasmine rice with 1 (14-oz) can full-fat coconut milk, ¾ cup water (or broth), a pinch of salt, and 2 tablespoons of butter. Bring to a gentle boil, then reduce to low, cover, and simmer for about 15 minutes (or according to your rice package timing) until the liquid is absorbed and the rice is tender. You might need to add more water towards the end if the rice isn't cooked. Remove from heat and let it sit covered for 5–10 minutes, then fluff with a fork before serving. You can add 2 or 3 tablespoons of freshly squeezed lime juice and 1/2 cup of chopped fresh cilantro. Season with salt and pepper.

My family and I really enjoy them! And I love sharing with my friends about how good they are! Tonight I made the sausage, spinach, mushrooms and bow tie pasta. (Not for the first time!) yum!!
