Perfect recipe for those nights when you don't have much time on your hands to fiddle with too many complicated ingredients.  This recipe is very similar to my popular broccoli bacon cheddar chicken. Baked chicken recipes these days often include some sophisticated ingredients and complicated cooking techniques, but not here.  It's a KETO friendly, low-carb, and gluten free recipe.

This Bacon, Creamy Cheese, Cheddar Chicken is simple and delicious, with the minimum prep, and everything is baked in 30 minutes, just like in this ranch chicken bake!  And, if you want to make your chicken bake with ham instead, you can make ham and cheese chicken.

And, in all of these recipes you use good old casserole dish.

    Substitutions

    • The recipe uses chicken breasts. You can also use skinless boneless chicken thighs and follow the recipe as is.
    • The recipe uses shredded Cheddar cheese. You can use also use Colby Jack cheese (combination of Colby cheese and Monterey Jack cheese).

    Cooking tips

    • Use small chicken breasts. If you purchased large chicken breasts, slice each one in half horizontally, to make it thinner. Or, purchase thinly sliced chicken breasts.
    • The cooking time depends on the thickness of your chicken breasts. The thinner the chicken breasts are, the quicker the dish will cook. On average, the chicken should be done in 20-30 minutes.
    • Bake the chicken uncovered, so that the cheese on top gets crispy.

Do you think this would work with boneless, skinless chicken thighs too? If so, how long in the oven? Can’t wait to try this!

Yes, it would work with boneless, skinless chicken thighs. Probably the same amount of time in the oven. Just check after 20 or 30 minutes if the chicken is completely cooked through, and cook longer, if needed.

I used cooked bacon in this recipe. So you can use any cooked bacon you have.

Thank you for the recipe! Made it last night exactly as directed. My husband and son both said to keep this in the regular rotation! Neither one could figure out the cream cheese layer. I didn’t tell because my son generally doesn’t care for cream cheese. Yummy!

Ha-ha! Yes, the cream cheese gets so bubbly and soft, and adds amazing creaminess to the chicken. So glad your family enjoyed this recipe. 🙂 Thank you for such a sweet comment!

Ok. I tried this with a twist. I marinated the chicken with a lime based marinade (any marinade of your choice), added green onion and drizzled breasts with ranch dressing (dont use a lot). Then served over cilantro and rice and freshly squeezed lime juice. Simply delicious.

It's so yummy, next time I'll just half cook bacon and wait until last 10 minutes to add cheese. I also added green beans around the chicken and it was very good!

Lol at all the people asking for nutritional info. It has cream cheese, cheddar cheese, and bacon. It's obviously not healthy. If you actually have to ask for the nutritional value then you probably shouldn't make this.

For people on a low carb/keto diet, this is actually healthy and the nutritional info, such as the amount of carbs, fat, and protein, is very important.
