This Bacon, Creamy Cheese, Cheddar Chicken is simple and delicious, with the minimum prep, and everything is baked in 30 minutes, just like in this ranch chicken bake! And, if you want to make your chicken bake with ham instead, you can make ham and cheese chicken.
And, in all of these recipes you use good old casserole dish.
Substitutions
- The recipe uses chicken breasts. You can also use skinless boneless chicken thighs and follow the recipe as is.
- The recipe uses shredded Cheddar cheese. You can use also use Colby Jack cheese (combination of Colby cheese and Monterey Jack cheese).
Cooking tips
- Use small chicken breasts. If you purchased large chicken breasts, slice each one in half horizontally, to make it thinner. Or, purchase thinly sliced chicken breasts.
- The cooking time depends on the thickness of your chicken breasts. The thinner the chicken breasts are, the quicker the dish will cook. On average, the chicken should be done in 20-30 minutes.
- Bake the chicken uncovered, so that the cheese on top gets crispy.

Steps to make this easy baked cream cheese cheddar chicken recipe:
Preheat the oven to 400 F. Grease the bottom of the casserole dish with olive oil. Then, add chicken breasts.
Next, sprinkle chicken breasts with salt and pepper. Top with cream cheese.
Next, top with chopped cooked bacon.
Finally, top with shredded Cheddar cheese.

Bacon, Cream Cheese, Cheddar Chicken
Ingredients
- 1 tablespoon olive oil
- 4 chicken breasts (use 4 thin chicken breasts, or use 2 large chicken breasts, sliced in half, horizontally)
- salt and pepper
- 6 oz cream cheese , cold, refrigerated, and sliced into 8 slices
- 8 strips bacon , cooked, chopped
- 1 cup Cheddar cheese , shredded
Instructions
- Preheat the oven to 400 F.
- Grease the bottom of the casserole dish with olive oil. I used the the oval casserole dish measured 13 inches x 9 inches x 4 inches deep.
- Add chicken breasts to the casserole dish. Note about chicken: use 4 thin chicken breasts, or use 2 large thick chicken breasts, sliced in half horizontally each to make 4 thin chicken breasts.
- Sprinkle chicken breasts with salt and pepper.
- Top with cream cheese. Cream cheese should be cold, right out of the fridge, sliced into 8 thin slices.
- Top with chopped cooked bacon (drained from fat).
- Top with shredded Cheddar cheese.
- Bake, uncovered, for about 20-30 minutes, until the chicken is cooked through. The cooking time will depend on the thickness of your chicken breasts.

I found this recipe a few months ago by typing in some ingredients I had on hand. It has became a weekly staple in our home. I’ve mixed up cheeses a few times and added honey mustard for dipping. I’ve also used tenders instead of breasts if I only had them on hand. If there are any left overs they are fought over! I’m either sneaking and eating them that night or secretly putting them in my lunch for the next day. Anyone know how this would work if you already have pre-cooked chicken breasts?

If you use already pre-cooked chicken breasts, bake this for 10 minutes at most, and probably broil for the last 3 or 5 minutes.

I just made this tonight for dinner and it was amazing!! I followed the directions exactly and it cooked perfectly. There is no need to wait on adding the cheese until later because if you follow directions and cut the chicken breast thin it will all cook together. I cooked it for 30 minutes on 400 degrees and then I broiled it on high for a few minutes because I like my cheese a little crispy. Will definitely be making again!!

Made this, followed instructions and took the tip on adding the cheese last. I cooked 40 minutes because I really wanted to make sure the chicken was cooked and the great thing is even if do want to cook a longer it won't dry out because the cream cheese layer kind of keeps it moist. I used all the cream cheese in the package and I used pre-cooked store bacon. I cut the breasts in half, like instructed and it worked perfectly.

I loved this recipe! I will definitely be adding it to one of my regular favorites. I used Colby jack cheese because that was all I had on hand, but it was still great! I also flavored my chicken with a little of Tony's Creole seasoning. Lastly, I used slightly smaller pieces of chicken breast. This recipe goes great with steamed broccoli! I made this tonight and it did NOT turn out like this. the cream cheese did NOT melt it was a hard blob. the chicken was dry and the bacon that was perfectly cooked and cut burnt to crunchy! your cooking instruction should be altered to brown in skillet, then place in baking pan, DON'T use cream cheese but instead use the queso block. very disappointing.my husband ate his but I didn't even finish mine.
