- ½ cup red onion diced
- 10 slices bacon cooked, drained of fat, and chopped
- 1 cup sharp cheddar cheese shredded
- 1 cup dried cranberries
Salad Dressing:
- ½ cup mayonnaise
- ½ cup sour cream or kefir or Greek yogurt
- 2 tablespoons lemon juice
- ¼ cup honey softened or warmed up
- ¼ teaspoon salt
Instructions
Broccoli and Cauliflower Salad:
- In a large bowl, combine together all salad ingredients.
Salad Dressing:
- In a small bowl, stir together mayonnaise, sour cream (or kefir or Greek yogurt), lemon juice, honey, and salt. Note that honey should be soft and runny, warm it up if needed so that it mixes easily. Whisk the ingredients until well combined and smooth. Add salt if needed.
- Gradually add the salad dressing to the large bowl with the salad ingredients, and stir everything together.

I think the salad really benefits from the addition of honey, but if you don't want the dressing to be sweet, you can omit the honey and maybe add extra dried cranberries.

How can this recipe be made ,for someone with diabetes?

Christina, I made this today and used Swerve brand erythritol in place of the honey (I cut the recipe in half and only used about 1 1/2 T of powdered Swerve because that is the sweetener I had). You may need to reduce or skip the carrots and use cranberries that are not sweetened or only sweetened with stevia or an appropriate sweetener (nothing artificial). This is a good recipe and I think you can lower the glycemic load to be appropriate for someone with diabetes.
