Bacon Pineapple BBQ Chicken with Red Onions and Mozzarella Cheese – a delicious way to cook chicken breasts and keep them moist, flavorful and far from boring!

If you’re looking for an easy pineapple chicken recipe or Hawaiian BBQ style chicken – this recipe is a perfect choice to try! All you have to do is throw 4 chicken breasts into a medium size casserole dish, top it with BBQ sauce, then add diced pineapple, cooked bacon, red onions, and shredded Mozzarella cheese.  Bake it uncovered in the oven for about 30 minutes, and your dinner is ready!  Your bacon pineapple BBQ chicken will be smothered in a lot of goodness and, therefore, will remain moist and tender which is what we want for chicken breasts.

The result tastes so good!  and, no wonder, chicken and pineapple combination is always good, especially when the BBQ sauce is involved.  The chicken will look pretty good too, with lots of colors:

How do you make bacon pineapple BBQ chicken?

Start by adding chicken breasts to the baking dish.  It’s not really necessary to season the chicken breasts with salt or pepper, as we are about to pile up a whole bunch of flavorful ingredients on top.

Next, top with about 1 cup of BBQ sauce, to cover all chicken breasts.  Use more BBQ sauce if needed.

Then, top your chicken with diced pineapple (from the can):

Top with diced, cooked bacon:

Add sliced red onion:

Bake your pineapple BBQ chicken for 25-30 minutes until the chicken is completely cooked and no longer pink in the center.

This easy pineapple chicken recipe is a perfect addition to your weekly menu.  It's just like Hawaiian BBQ style chicken but without the need to turn on the grill.   Bake these chicken breasts smothered with BBQ Sauce, pineapple, bacon, red onions, and Mozzarella cheese in the oven for 30 minutes, and your dinner is ready!

Ingredients
  • 4 chicken breasts (skinless, boneless)
  • 1 cup BBQ sauce
  • 1 cup pineapple diced
  • 6 strips bacon cooked and diced
  • 1/4 red onion sliced (about 1/4 cup) + extra
  • 1 cup Mozzarella cheese shredded
  • 2 green onions diced
Instructions
  1. Preheat oven to 375 F.
  2. Add chicken breasts to the casserole dish. Using a spoon, brush chicken breasts with BBQ sauce.
  3. Top with diced pineapple.
  4. Add chopped cooked bacon on top of the chicken.
  5. Top with sliced red onion.
  6. Top with shredded Mozzarella cheese.
  7. Bake for 25-30 minutes, uncovered, until the chicken is cooked through and no longer pink in the center. Broil for the last 4 minutes if desired.
  8. To serve, top chicken with a small amount of extra diced pineapple, a little bit of remaining sliced red onion, and diced green onions.

    Delicious!!!! So easy and so flavorful. It’s just like a BBQ chicken pizza minus the crust. It will definitely be added to our meal rotation! I cooked it for about 40 minutes and it was perfect. Added a little more cheese at the end and broiled it on high for a few more minutes.
    For the sauce, I first combined Trader Joe’s Sweet & Spicy Pineapple BBQ sauce with a little Sweet Baby Rays, a little siracha & a clove of minced garlic.

    I made this last night, making chicken recipes often, I knew my chicken wouldn’t be done in 30min. I did 25 min covered with foil, cooked an additional 15/20 min. At the point it looked great, chicken was done and moist and it was not discolored or burned on top. I decided to do the broil step. I would recommend 2 min… 4 the top did get a little too dark… recipe/flavor was amazing!!! Just adjust cook time. I’m eating low carb.. but could easily pound chicken out and out this on Texas toast to sell a chicken sandwhich.

    I cooked mine at 400 for 30 mins (which is my normal chicken cook temp and time) and it was cooked through. The onion and pineapple could have used more time as they were a bit under done. I’d also season the chicken before dressing it. Overall, it was good and I will try again with a few modifications.

    Loved this recipe idea. The BBQ sauce, pineapple, cheese, and chicken were a delicious combo. I also love cooking my chicken using my Souse Vide machine. So, my modified version of this recipe involved cooking the chicken breasts (Souse Vide) at 140 degrees for one hour. Then I pulled them and assembled in a baking dish with all the fixings and finished at 450 in the oven for around 5 minutes. The chicken was super juicy and the cheese was just a little crispy like I like it. Thanks Julia for the recipe!

    I cooked the chicken half way first and then added the sauce and toppings and finished cooking it!

    Followed recipe and chicken was completely raw with the toppings being left burnt.

      What temperature did you set your oven to? When cooking the chicken at 375 F for 30 minutes nothing should’ve been burnt. I used thinly sliced, skinless, and boneless chicken breasts. What kind of chicken breasts did you use? Bone-in chicken breasts cook longer.

        That is why everyone is having a problem with the recipe. You use thinly sliced boneless chicken. Thinly sliced is not mentioned. Please update your recipe to include those two words. Boneless chicken that isn’t thinly sliced is twice as thick.

      Mine was completely raw as well. I used normal boneless skinless chicken breats. I think next time I’ll leave the cheese off until the end, butterfly the breasts, and double the time.

        Mine was ALSO completely raw, I honestly thought it must have been something I did wrong because I have never been good with cooking chicken. Maybe specifically small chicken breast would be ideal, I just used normal boneless chicken breasts as well.
