    Creamy Broccoli, Cauliflower, Corn, Bacon Salad

    Creamy Broccoli, Cauliflower, Corn, Bacon Salad with Sliced Carrots, Diced Red Onions, and shredded Sharp Cheddar Cheese.  There are 2 salad dressing options: Ranch dressing made with mayo/sour cream combination  or super delicious homemade creamy dressing without Ranch - you choose!

    What a delicious salad this turned out to be!  Try it for yourself!  There are lots of raw vegetables in this salad: Broccoli, Cauliflower, Corn, Carrots, Red Onions.

    Ranch dressing, as you can guess, will go great with all these raw veggies.  If you don't want to use Ranch, the other option is to combine mayo with sour cream (or Kefir or Greek yogurt) and then mix it with softened honey and lemon juice (preferably freshly squeezed)! You choose which dressing you want with this Creamy Broccoli and Cauliflower Salad.

    It's really important to dice broccoli and cauliflower into really small and fine pieces so that the dressing coats more surface, and that makes the salad even creamier and more delicious!

    I used store-bought sliced carrots, and I cooked my bacon in the oven.  It's really an easy recipe, once you have all the ingredients.  Just assemble everything together and mix it with the dressing!

    Ingredients

    Salad Ingredients:

    • 3 cups broccoli florets , finely chopped into small pieces
    • 3 cups cauliflower florets , finely chopped into small pieces
    • 2 cups carrots , finely sliced
    • 15 oz sweet corn , from the can, drained
    • ½ cup red onion , diced
    • 10 slices bacon , cooked, drained of fat, and chopped
    • 1 cup sharp cheddar cheese , shredded

    Salad Dressing option 1 (Ranch dressing):

    • ½ cup mayo
    • ½ cup sour cream or kefir or Greek yogurt
    • 2 tablespoons dry Ranch mix or more, to taste

    Salad Dressing option 2 (without Ranch):

    • ½ cup mayonnaise
    • ½ cup sour cream or kefir or Greek yogurt
    • 2 tablespoons lemon juice
    • ¼ cup honey , softened or warmed up
    • ¼ teaspoon salt

    Instructions 

    Salad Ingredients:

    • In a large bowl, combine together all salad ingredients.
    • Use one of the two salad dressing recipes provided.

    Salad Dressing option 1 (Ranch dressing):

    • In a medium bowl, combine mayo and sour cream (or kefir or Greek yogurt) and add 1 or 2 tablespoons of dry Ranch mix. Mix well and taste to see if you need to add more dry Ranch mix to the dressing.

    Salad Dressing option 2 (without Ranch):

    • In a small bowl, stir together mayonnaise, sour cream (or kefir or Greek yogurt), lemon juice, honey, and salt. Note that honey should be soft and runny, warm it up if needed, so that it mixes easily. Whisk the ingredients until well combined and smooth. Add salt if needed.
    • Gradually add the salad dressing of your choice to the large bowl with the salad ingredients, and stir everything together.

      Made this today - dressing is
      mine - equal parts of
      Mayo and sour cream, rice wine vinegar and Splenda as I like sweeter not tart. Since I made a massive size I didnt pour on salad, I just let people add it to their taste. Plus the salad gets soft if left on it. Well worth effort!!!

        Hi Sandra, Yes, you can use sugar here. I would use 2 tablespoons of white granulated or brown sugar instead of 1/4 cup of honey.

      Served this recipe at my nephews birthday party. Added diced fresh tomatoes and peas. Bacon was on the side as my husband is a vegetarian. He loved it as did the rest of my family. Thanks for a great recipe.

      I just made this for tonight, I haven't even added the bacon and cheese yet but it is so tasty! I used the non-ranch dressing, it's simple and delicious. I can see adding in as desired, things like soy sauce or spices to suit the dish! I'm using this salad as part of a salmon power bowl.

      I have most of the ingredients in the freezer. I doubt I could thaw and use these vegetables, but what is your opinion.

        Peggy, yes, you can definitely thaw and use thawed veggies! Just drain them of any liquid on papper towels. The dressing is creamy so any soggines will be well disguised.

      I really enjoyed this salad. I have made a salad similar to this one but have not ever used whole kernel corn. I loved that addition!! The corn pops with the flavors of the onion, bacon and dressing along with rest of the ingredients. I will be using this recipe from now on!! Thank you for sharing!!
