Creamy Broccoli, Cauliflower, Corn, Bacon Salad with Sliced Carrots, Diced Red Onions, and shredded Sharp Cheddar Cheese. There are 2 salad dressing options: Ranch dressing made with mayo/sour cream combination or super delicious homemade creamy dressing without Ranch - you choose!
What a delicious salad this turned out to be! Try it for yourself! There are lots of raw vegetables in this salad: Broccoli, Cauliflower, Corn, Carrots, Red Onions.
Ranch dressing, as you can guess, will go great with all these raw veggies. If you don't want to use Ranch, the other option is to combine mayo with sour cream (or Kefir or Greek yogurt) and then mix it with softened honey and lemon juice (preferably freshly squeezed)! You choose which dressing you want with this Creamy Broccoli and Cauliflower Salad.
It's really important to dice broccoli and cauliflower into really small and fine pieces so that the dressing coats more surface, and that makes the salad even creamier and more delicious!
I used store-bought sliced carrots, and I cooked my bacon in the oven. It's really an easy recipe, once you have all the ingredients. Just assemble everything together and mix it with the dressing!

Creamy Broccoli, Cauliflower, Corn, Bacon Salad
Ingredients
Salad Ingredients:
- 3 cups broccoli florets , finely chopped into small pieces
- 3 cups cauliflower florets , finely chopped into small pieces
- 2 cups carrots , finely sliced
- 15 oz sweet corn , from the can, drained
- ½ cup red onion , diced
- 10 slices bacon , cooked, drained of fat, and chopped
- 1 cup sharp cheddar cheese , shredded
Salad Dressing option 1 (Ranch dressing):
- ½ cup mayo
- ½ cup sour cream or kefir or Greek yogurt
- 2 tablespoons dry Ranch mix or more, to taste
Salad Dressing option 2 (without Ranch):
- ½ cup mayonnaise
- ½ cup sour cream or kefir or Greek yogurt
- 2 tablespoons lemon juice
- ¼ cup honey , softened or warmed up
- ¼ teaspoon salt
Instructions
Salad Ingredients:
- In a large bowl, combine together all salad ingredients.
- Use one of the two salad dressing recipes provided.
Salad Dressing option 1 (Ranch dressing):
- In a medium bowl, combine mayo and sour cream (or kefir or Greek yogurt) and add 1 or 2 tablespoons of dry Ranch mix. Mix well and taste to see if you need to add more dry Ranch mix to the dressing.
Salad Dressing option 2 (without Ranch):
- In a small bowl, stir together mayonnaise, sour cream (or kefir or Greek yogurt), lemon juice, honey, and salt. Note that honey should be soft and runny, warm it up if needed, so that it mixes easily. Whisk the ingredients until well combined and smooth. Add salt if needed.
- Gradually add the salad dressing of your choice to the large bowl with the salad ingredients, and stir everything together.

Absolutely delicious! I left out the carrots because I don’t care for them and used bottled ranch with a spoonful of mayo to thicken it up a bit. Even hubby who hates vegetables was a fan. Will definitely have again!

I haven't tried it yet. The only difference I need to change will be the onions. Unfortunately, red onion makes me very sick. I'll try it with small green onions.
