My stepdaughter just found out she is diabetic, so I've been looking for low carb and low sugar meals to make for her. I found this while searching. It is so simple, and really yummy! It's also a great dish to make with another daughter who is just learning to cook - very few ingredients and simple steps. We really love this! Thanks for sharing!
Julia

Hello! I'm getting ready to enjoy this yummy dish too, but caught sight of your post about your daughter being a diabetic! I am 26 and have been type 1 since I was 7! If you ever need someone to bounce ideas off of or to vent to, I'm easy to find on social media 🙂 I'm hoping to start an online support group for type 1's because it's certainly an every day battle. God bless you! -Hannah Eagan

I made this tonight! So good but it is very rich so I paired it with white rice and that helped! Soooo good though!
Julia

If you suck at making bacon try baking it. put it in the oven on 400° for 15 mins and voila nice crisp bacon!
Julia
Thanks for the tip! I also prefer to bake the bacon in the oven. Then, I drain the bacon slices on paper towels to get rid of extra grease.

Looks delicious I am making it tonight.. Can I ask is it 602 calories for one small breast of chicken?
Julia

This was really good... I was surprised that the cream cheese didn’t melt like most cheeses and it really added a richness to our meal. I paired it with a chopped green salad and steamed broccoli. Yes I’d make this again.
Julia
So happy to read comments like yours! Great idea to serve this with the green salad and steamed broccoli!

Seems kind of silly to me to advertise a recipe as gluten free, then to advocate mashed potatoes or rice as a side.
Michael
Well since rice and potatoes don’t have gluten - I think it makes sense.
