Perfect recipe for those nights when you don't have much time on your hands to fiddle with too many complicated ingredients.  This recipe is very similar to my popular broccoli bacon cheddar chicken. Baked chicken recipes these days often include some sophisticated ingredients and complicated cooking techniques, but not here.  It's a KETO friendly, low-carb, and gluten free recipe.

This Bacon, Creamy Cheese, Cheddar Chicken is simple and delicious, with the minimum prep, and everything is baked in 30 minutes, just like in this ranch chicken bake!  And, if you want to make your chicken bake with ham instead, you can make ham and cheese chicken.

And, in all of these recipes you use good old casserole dish.

    Substitutions

    • The recipe uses chicken breasts. You can also use skinless boneless chicken thighs and follow the recipe as is.
    • The recipe uses shredded Cheddar cheese. You can use also use Colby Jack cheese (combination of Colby cheese and Monterey Jack cheese).

    Cooking tips

    • Use small chicken breasts. If you purchased large chicken breasts, slice each one in half horizontally, to make it thinner. Or, purchase thinly sliced chicken breasts.
    • The cooking time depends on the thickness of your chicken breasts. The thinner the chicken breasts are, the quicker the dish will cook. On average, the chicken should be done in 20-30 minutes.
    • Bake the chicken uncovered, so that the cheese on top gets crispy.

My stepdaughter just found out she is diabetic, so I've been looking for low carb and low sugar meals to make for her. I found this while searching. It is so simple, and really yummy! It's also a great dish to make with another daughter who is just learning to cook - very few ingredients and simple steps. We really love this! Thanks for sharing!

Hello! I'm getting ready to enjoy this yummy dish too, but caught sight of your post about your daughter being a diabetic! I am 26 and have been type 1 since I was 7! If you ever need someone to bounce ideas off of or to vent to, I'm easy to find on social media 🙂 I'm hoping to start an online support group for type 1's because it's certainly an every day battle. God bless you! -Hannah Eagan

If you suck at making bacon try baking it. put it in the oven on 400° for 15 mins and voila nice crisp bacon!

Thanks for the tip! I also prefer to bake the bacon in the oven. Then, I drain the bacon slices on paper towels to get rid of extra grease.

This was really good... I was surprised that the cream cheese didn’t melt like most cheeses and it really added a richness to our meal. I paired it with a chopped green salad and steamed broccoli. Yes I’d make this again.

Seems kind of silly to me to advertise a recipe as gluten free, then to advocate mashed potatoes or rice as a side.
