Everything is baked together in one casserole dish. Chicken and 2 kinds of cheese. Try it and see for yourself! This chicken bake is low carb, high fat, KETO friendly, gluten free recipe.

Perfect recipe for those nights when you don't have much time on your hands to fiddle with too many complicated ingredients. This recipe is very similar to my popular broccoli bacon cheddar chicken. Baked chicken recipes these days often include some sophisticated ingredients and complicated cooking techniques, but not here. It's a KETO friendly, low-carb, and gluten free recipe.
This Bacon, Creamy Cheese, Cheddar Chicken is simple and delicious, with the minimum prep, and everything is baked in 30 minutes, just like in this ranch chicken bake! And, if you want to make your chicken bake with ham instead, you can make ham and cheese chicken.
And, in all of these recipes you use good old casserole dish.
Substitutions
- The recipe uses chicken breasts. You can also use skinless boneless chicken thighs and follow the recipe as is.
- The recipe uses shredded Cheddar cheese. You can use also use Colby Jack cheese (combination of Colby cheese and Monterey Jack cheese).
Cooking tips
- Use small chicken breasts. If you purchased large chicken breasts, slice each one in half horizontally, to make it thinner. Or, purchase thinly sliced chicken breasts.
- The cooking time depends on the thickness of your chicken breasts. The thinner the chicken breasts are, the quicker the dish will cook. On average, the chicken should be done in 20-30 minutes.
- Bake the chicken uncovered, so that the cheese on top gets crispy.

- This recipe contains cream cheese, Cheddar cheese, and bacon. All these ingredients have high fat, low sugar content.
- This recipe contains foods that are high in protein but low in carb, such as chicken breasts.
- There is no flour, no grains, nothing with gluten in this recipe.
Steps to make this easy baked cream cheese cheddar chicken recipe:
Preheat the oven to 400 F. Grease the bottom of the casserole dish with olive oil. Then, add chicken breasts.

Next, sprinkle chicken breasts with salt and pepper. Top with cream cheese.

Next, top with chopped cooked bacon.

Finally, top with shredded Cheddar cheese.

Bake, uncovered, for about 20-30 minutes, until the chicken is cooked through. The cooking time will depend on the thickness of your chicken breasts.

Bacon, Cream Cheese, Cheddar Chicken
Ingredients
- 1 tablespoon olive oil
- 4 chicken breasts (use 4 thin chicken breasts, or use 2 large chicken breasts, sliced in half, horizontally)
- salt and pepper
- 6 oz cream cheese , cold, refrigerated, and sliced into 8 slices
- 8 strips bacon , cooked, chopped
- 1 cup Cheddar cheese , shredded
Instructions
- Preheat the oven to 400 F.
- Grease the bottom of the casserole dish with olive oil. I used the the oval casserole dish measured 13 inches x 9 inches x 4 inches deep.
- Add chicken breasts to the casserole dish. Note about chicken: use 4 thin chicken breasts, or use 2 large thick chicken breasts, sliced in half horizontally each to make 4 thin chicken breasts.
- Sprinkle chicken breasts with salt and pepper.
- Top with cream cheese. Cream cheese should be cold, right out of the fridge, sliced into 8 thin slices.
- Top with chopped cooked bacon (drained from fat).
- Top with shredded Cheddar cheese.
- Bake, uncovered, for about 20-30 minutes, until the chicken is cooked through. The cooking time will depend on the thickness of your chicken breasts.

Fabulous recipe. I used thick chicken breasts and sliced a pocket into each piece. Then I stuffed it with cream cheese, cheddar and cooked bacon. A little sprinkle of cheese and bacon on top. My grandson swears it is the best chicken ever!!

I wonder if a layer of hash browns on the bottom would work. It sounds like it would be good with and I have some.
I think it should work. The only thing is it seems that most recipes that bake hash browns as a casserole require 60 minutes of baking time. I think if you use thicker chicken breasts in this recipe (not thinly sliced) and bake this dish for a bit longer it should work just fine!
I made this dish for dinner alongside rice and a ceasar salad. The chicken was delicious. I made it exactly how the recipe listed. For the user above, make sure to Pat dry your chicken after rinsing it.

I cooked 4 thin chicken breasts (less than 2 inches) according to the recipe and it came out way too juicy. The juice was running throughout the pan and made the chicken super soggy. I preheated the oven to 400 and checked the chicken with a thermometer after 30 minutes. The chicken measured 170 degrees. I ised cold cream cheese like the recipe called for as well. Anyone else have runny chicken juices? And anything i can do about it? Besides that mess, the recipe was good! I would cover for the first 20 minutes then uncover for last 10 minutes so the cheddar cheese and bacon don’t get too crispy and the cream cheese melts better. You could also broil for a minute or two if cheese isnt browned enough to your liking.

I don't know if you used chicken that's been frozen, but if the chicken is frozen, make sure to thaw it completely before using it in this recipe. And, if it's been frozen and thawed, pat it dry with paper towels to remove extra moisture.
To be honest, I wasn't expecting much from this recipe, but I wanted something different, This recipe is amazing and so easy! My family is disappointed that there isn't any leftover and are already asking for it to be made again!

I do weekly meal prepping. I want to try this but how do you think I should freeze it? I have a good idea but wanted to ask. It’s the cream cheese I’m feeling off about. Cream cheese is never the same after freezing it
Do you think I can add zucchini to this dish? I was going to make your baked zucchini and chicken dish, but I would like to use up some cream cheese I have in the fridge. This might be a simple question, but I don't cook often, not sure if the cream cheese and zucchini would taste okay together! 🙂
I am also not sure if zucchini and cream cheese will go well here. I think zucchini goes well with harder cheeses, such as Parmesan, and not so well with softer cheeses like cream cheese.
I bought thin chicken breasts, which were very thin and they took 25 minutes at 400 degrees on convection bake which is supposed to be faster (I started checking it at 15 minutes and added 5 minutes twice), but oh my goodness, this is sooooo delicious!! I will definitely make this again!
