Pesto Shrimp with Mushrooms - sautéed shrimp with mushrooms and pesto.
This easy, spicy pesto shrimp recipe has lots of flavor thanks to the ingredient list: pesto, garlic, red pepper flakes, fresh basil. It's gluten free and low carb.

Pesto Shrimp with Mushrooms
Ingredients
- 1 tablespoon olive oil
- 1 pound shrimp , peeled, deveined
- ¼ teaspoon salt
- ¼ teaspoon red pepper flakes
- 1 tablespoon olive oil
- 8 ounces white mushrooms , sliced
- 3 cloves garlic , minced
- ¼ teaspoon salt
- ½ cup basil pesto
- ½ cup chicken broth
- 1 tablespoon fresh basil , chopped
Instructions
- Heat large skillet on medium-high heat until hot. Add olive oil - it should run without sizzling. Add shrimp, season shrimp with ¼ teaspoon salt and ¼ teaspoon red pepper flakes, cook for about 3 minutes, turning once midway, until shrimp is pink and cooked through. Remove shrimp from the skillet.
- Add another tablespoon of olive oil to the same, now empty, skillet. Add sliced mushrooms. Add minced garlic. Season mushrooms with ¼ teaspoon salt. Cook, stirring, until mushrooms release liquid and reduce in volume and get soft, for about a minute or two. Add back the cooked shrimp. Add ½ cup basil pesto and ½ cup chicken broth. On medium heat, mix everything to combine. Remove from heat.
- When ready to serve, top the shrimp with chopped fresh basil.

Way too watery; the mushrooms need to be reduced much further than a minute or two. I should have known hitting that with half a cup of broth would do

If it's too watery, cook the sauce on medium heat until it reduces to the desired consistency.

Very very very good i used scallops and shrimp and just reduced the stock for a little before adding pesto but it was soooo good we put it right on top of roasted red potatoes thanks for the great recipe

I read the recipe and found it intriguing enough for my wife and I to prepare this evening. I see all of these positive reviews but I don’t see (taste) what others are raving about. I have made countless shrimp/pasta dishes, all of which were good to excellent. This doesn’t even reach the bench for my wife and myself. I used fresh garlic and a fresh pesto. I used wild caught large shrimp and all the rest. This dish ended up in the garbage I hate to say being there is always a cost associated with trying new recipes.

If it's too watery, simmer the sauce (without shrimp), until the extra liquid evaporates.

Two best side dishes with this recipe would be either pasta or rice. Since you're on a low-carb diet, you can try cauliflower rice. Take a look at this recipe below, one of the recent commenters (if you look at the comments section you will see) made this rice recipe but used cauliflower rice instead by adjusting the cooking time since cauliflower cooks faster than regular rice and reducing the amount of chicken broth used:
