    Pesto Shrimp with Mushrooms

    This easy, spicy pesto shrimp recipe has lots of flavor thanks to the ingredient list: pesto, garlic, red pepper flakes, fresh basil. It's gluten free and low carb.

    Ingredients

    • 1 tablespoon olive oil
    • 1 pound shrimp , peeled, deveined
    • ¼ teaspoon salt
    • ¼ teaspoon red pepper flakes
    • 1 tablespoon olive oil
    • 8 ounces white mushrooms , sliced
    • 3 cloves garlic , minced
    • ½ cup basil pesto
    • ½ cup chicken broth
    • 1 tablespoon fresh basil , chopped

    Prevent your screen from going dark

    Instructions 

    • Heat large skillet on medium-high heat until hot. Add olive oil - it should run without sizzling. Add shrimp, season shrimp with ¼ teaspoon salt and ¼ teaspoon red pepper flakes, cook for about 3 minutes, turning once midway, until shrimp is pink and cooked through. Remove shrimp from the skillet.
    • Add another tablespoon of olive oil to the same, now empty, skillet. Add sliced mushrooms.  Add minced garlic.  Season mushrooms with salt (to taste). Cook, stirring, until mushrooms release liquid and reduce in volume and get soft, for about a minute or two. Add back the cooked shrimp. Add ½ cup basil pesto and ½ cup chicken broth. On medium heat, mix everything to combine. Remove from heat.
    • When ready to serve, top the shrimp with chopped fresh basil.

      Authentic pesto verde has enough garlic in it to knock you over! Same with fresh basil. I would omit those two ingredients from this recipe!

      This dish is absolutely heavenly! I have to admit my version was not too healthy. Instead of the chicken broth, I added a stick of butter. We ate the shrimp with Italian bread dipped in the sauce. Amazing! Very quick and easy to make was an added bonus. I’ve tried lots of recipes from Pinterest, and this was our favorite by far!

      Such a delicious dish! I made a homemade walnut pesto and used chicken bone broth. Served over roasted spaghetti squash. Really satisfied the Italian craving. Everyone loved this dish!

      This recipe is amazing. I added fresh spinach after the mushrooms were cooked. I also reduced the chicken stock to 1/4 cup. When it was done I put fresh grated Parmesan cheese over it. Moved this recipe into my favorites folder. Glad I have some leftovers.

      Woah! I made this with zucchini noodles and added cherry tomatoes to the mushrooms. The only thing I changed was that I halved the chicken broth. My boyfriend says 11/10! Amazing
