One-Pan Smothered Pork Chops with creamy mushroom, bacon and fresh thyme sauce. Use boneless pork loin chops. Everything is cooked in one large skillet. Easy recipe. Minimal cleanup. Low carb, high fat, KETO friendly, gluten free recipe.
Why make smothered pork chops
- Tender and moist texture, forget dry pork chop meat. Pork chops are a great cut of meat that can taste really good but they can also be easily overcooked and result in a tough, dry meat. Enter these smothered pork chops. Covered with mushrooms and bacon and a cream sauce with lots of fresh thyme, your creamy pork chops are guaranteed to be tender and moist, and not dry at all. Even if you do overcook them a little, you won't notice it thanks to the creamy sauce.
- Use only one pan. That's right! You use one pan to make these smothered pork chops which minimizes the cleanup.
- 30 minutes cooking time. It's a great recipe for a busy person who wants something easy that tastes like comfort food and looks like something from a good restaurant.

Side dishes to serve with smothered pork chops
Because there is so much creaminess and so much meat in this recipe, I suggest that you serve simple cooked spinach, or steamed asparagus with this dish. Or other cooked greens. Mashed potatoes, or easy scalloped potatoes are also great side dishes to go with these smothered pork chops. I also suggest that you try this really easy Asiago cheese roasted broccoli recipe - you can roast the broccoli in the oven while your creamy pork chops are cooked on the stove top and you can use any cheese you like, such as Parmesan cheese, not just Asiago.

Bacon and Mushroom Smothered Pork Chops
Ingredients
- 6 strips bacon , uncooked
- 2 lb pork loin chops , boneless (3 or 4 pork chops, depending on size)
- salt and pepper
- 8 oz mushrooms , sliced
- 2 garlic cloves , minced
- 5 sprigs fresh thyme , just leaves
- 1 tablespoon olive oil
- 2 tablespoons flour (use gluten free flour for gluten free version, omit flour to make it KETO friendly)
- ⅔ cup chicken broth
- ½ cup heavy cream
Instructions
- Chop bacon into smaller bites. In a large skillet, cook on medium heat until the bacon is cooked. Remove bacon from the pan to a plate, leaving the fat in.
- Season pork chops with salt and pepper. In the same pan, on high-medium heat, cook pork chops for 4 minutes on each side in bacon fat, until nicely seared. Reduce heat to medium midway through cooking. Remove the pork chops to a plate from the pan.
- Add sliced mushrooms and minced garlic to the same pan. If needed, add 1 tablespoon olive oil. Season with salt. Sprinkle with fresh thyme leaves. Cook on medium heat for about 5 minutes, stirring, until mushrooms soften and release juices. Sprinkle 2 tablespoons of flour all over the mushrooms, and stir the flour in on medium heat.
- Add chicken broth and raise the heat to bring to boil, constantly stirring. You should have a smooth slurry from the flour and the chicken broth. Add heavy cream and stir it in while boiling until everything is smooth. Then reduce heat to low.
- Add back the pork chops and the bacon. Cook on low heat, covered, until the pork chops are cooked through.
- To serve, top pork chops with mushroom and bacon mixture and with more fresh thyme leaves.

Just getting ready to make; however, I do not have a thermometer, and would appreciate some idea of how long “until pork chops are done” in matter of time. Will purchase thermometer, but then question arises, what is “done” for boneless pork chop of this size (on thermometer?)

The seared for 4 minutes in each side, with maybe a 1/2-3/4“ pork chop, the 8 minutes searing time in the bacon fatnseemednto cook well. I just left to simmer in sauce for a couple minutes and it was good perfect temp, 145.

This was a fun and tasty dish! We loved it!
I thought the ease of the one use dish was great. I always seem to mess up a gravy, of any kind, but this one worked perfect. Felt like a rock star!

I substitute Kite Hill Cream cheese for the heavy cream. It’s a great dairy free alternative.

This was phenomenal! I added a bit of Thai chili peppers because we like a bit of heat, but otherwise kept it 100%. Great job

This was a hit even with my 5 and 12 year old. I used xanthan gum as a thickener instead of flour to keep it keto. Also, served it over noodles for my kids and just a side of broccoli for me and the Mr.

So glad you enjoyed this recipe!

Soooooo good. I’m so bad at getting everything right and not to accidentally scorch this but this recipe worked perfectly. Will be using more of your recipes

Tried this recipe in attempt to expand my keto menu and BANG! It’s so simple and tastes delicious. I’ve never used fresh herbs before and it really made a difference. The cream sauce feels very indulgent but it’s so simple to put together, plus it’s keto-friendly! I cut the recipe in half and everything was perfect. I’ve never cooked pork chops before so I did invest in a meat thermometer and I’m glad I did because they cooked through very quickly. We will definitely be having this again very soon!
Julia
Thank you for such a nice and thoughtful comment! I am glad you tried this recipe and enjoyed it!

Delicious! Since I am Keto I substituted the flour for 2 ounces of cream cheese and added a bit more of the seasonings. Will definitely make again!

For someone who is a beginner and doesn't have a thermometer can you possibly say in minutes how long to cook pork chops for please? They are boneless and 1in thick I want to say. I'm scared of undercookin it. You have some amazing recipes and I want to try them all. I've been cooking for my family for a long time now and I come from some great European cooks but looking to expand as far as the food menu goes. I mainly stick to chicken and beef and have never made pork chops but i have made pork tenderloin and since I was so afraid of undercooking it and posioning my family i dried it out then felt horrible. It tasted so amazing but it was too dry.
