Bacon and Mushroom Smothered Pork Chops
Ingredients
- 6 strips bacon , uncooked
- 2 lb pork loin chops , boneless (3 or 4 pork chops, depending on size)
- salt and pepper
- 8 oz mushrooms , sliced
- 2 garlic cloves , minced
- 5 sprigs fresh thyme , just leaves
- 1 tablespoon olive oil
- 2 tablespoons flour (use gluten free flour for gluten free version, omit flour to make it KETO friendly)
- ⅔ cup chicken broth
- ½ cup heavy cream
Instructions
- Chop bacon into smaller bites. In a large skillet, cook on medium heat until the bacon is cooked. Remove bacon from the pan to a plate, leaving the fat in.
- Season pork chops with salt and pepper. In the same pan, on high-medium heat, cook pork chops for 4 minutes on each side in bacon fat, until nicely seared. Reduce heat to medium midway through cooking. Remove the pork chops to a plate from the pan.
- Add sliced mushrooms and minced garlic to the same pan. If needed, add 1 tablespoon olive oil. Season with salt. Sprinkle with fresh thyme leaves. Cook on medium heat for about 5 minutes, stirring, until mushrooms soften and release juices. Sprinkle 2 tablespoons of flour all over the mushrooms, and stir the flour in on medium heat.
- Add chicken broth and raise the heat to bring to boil, constantly stirring. You should have a smooth slurry from the flour and the chicken broth. Add heavy cream and stir it in while boiling until everything is smooth. Then reduce heat to low.
- Add back the pork chops and the bacon. Cook on low heat, covered, until the pork chops are cooked through.
- To serve, top pork chops with mushroom and bacon mixture and with more fresh thyme leaves.

I made it with a side of broccoli and cheese. I omitted the flower, and I did not have chicken broth so I used my beef broth, still tasted great! I also seasoned my pork chops with Season All and Cumin, along with the salt and pepper. This was also super quick! What can you substitute the mushrooms with??

It's hard to find a substitute for mushrooms. What I am going to suggest is not a substitute, but an alternative that will work well with this sauce. Use sun-dried tomatoes and/or spinach.

Looks and sounds delicious. I've cooked various versions of this over the years. A small can of condensed cream of mushroom soup with some dry white wine used to clean the can out works wonderfully well too! I normally start the seasoned loin steaks ( I'm from the UK so that's what I call 'em :~) ) in a hot pan with a knob of butter and some olive oil. Once one side has got some caramelisation going on, I flip them over for about a minute then pour the stock/broth over then cover and cook for 10 minutes or so in the pre heated oven @ gas 5/ 375F/190C/170C Fan. I remove the steaks to a plate and keep covered and warm while sauteeing the bacon & mushrooms in the stock/broth and meat juices, adding thyme and dried oregano along with the condensed soup and wine. I let it all bubble away gently then add the loin steaks for a further minute or so. Serve and enjoy. It also works well using chicken legs.

For this particular recipe, if you don't have chicken broth, just increase the amount of heavy cream in increments until the sauce acquires the desired consistency. Or, you can use a vegetable broth.

I hade this with a twist. I put it in a cover casserole once all of the stove top browning a sauce making was done. I cooked at 350 for 30 minute and then reduced to 225 and cooked until the pork was falling apart.
