With all the "low carb" recipes I've made over all these years, this one is my favorite. It's also one of my top ten favorites with loaded carbs. I followed the recipe exactly, although I used pounded flat boneless skinless thighs, and added a handful of grape tomatoes on the top before roasting it at 375 (convection roast) for 35 min. Everything in it was perfectly cooked, and the popped little tomatoes were colorful and very pretty. My sweet husband was a happy camper, and next time I may include some Angel Hair Pasta on his plate for my man.
The killer tasty sauce at the bottom would be perfect for pasta.
