    I love baby arugula leaves - they are so good and flavorful in fresh salads! I also love spinach. Spinach and arugula definitely top the list of my favorite salad greens! They are easily interchangeable in recipes: in this salad, you can easily substitute spinach leaves for arugula.

    Try this delicious salad - it's such a combination of flavors: savory, sweet, peppery, and salty.  Earthy walnuts, sweet golden raisins, lightly peppery arugula leaves, juicy grape tomatoes, creamy and salty and very flavorful Gorgonzola cheese - all of that tossed in a slightly sweet dressing made with balsamic vinegar, olive oil, and a touch of honey.  YUM!

    Ingredients

    Arugula salad:

    • 4 cups baby arugula leaves
    • â…“ cup walnuts , chopped
    • ¼ cup Gorgonzola cheese
    • ½ cup golden raisins
    • 1 cup grape tomatoes

    Salad dressing:

    • ¼ cup balsamic vinegar
    • 2 tablespoons olive oil
    • 2 teaspoons honey
    Prevent your screen from going dark

    Instructions 

    • In a large salad bowl, combine arugula leaves, walnuts, raisins and grape tomatoes.
    • To make salad dressing: in a separate small mixing bowl, mix vinegar with olive oil, honey, whisking until emulsified.
    • Add dressing to the salad and toss until well mixed. Note: you don't have to use the whole amount of salad dressing - use just enough to coat. Top with crumbled Gorgonzola cheese.
