Ingredients

  • Follow Julia on Pinterest and Facebook to get more recipes and dinner ideas for your weekly meal planning!

  • half a pound of shrimp (90 count of small shrimp in 1 pound). Use unfrozen uncooked shrimp. If you have to, you can use unfrozen cooked shrimp - it will work here too.
  • 4 oz sun-dried tomatoes in olive oil
  • salt
  • 1/4 teaspoon paprika
  • 4 garlic cloves, minced
  • 1 cup half and half (or milk)
  • 1 teaspoon dried basil
  • ΒΌ teaspoon crushed red pepper
  • 1 cup Parmesan cheese, freshly grated
  • 8 oz fettuccine pasta (use gluten free brown rice fettuccine for gluten free version)

Instructions

  1. Note: if using sun-dried tomatoes in oil (in a jar), make sure to drain sun-dried tomatoes from oil, before using them. Reserve 2 tablespoons of this drained oil for sauteing as described below:
  2. In a large skillet, saute minced garlic and sun-dried tomatoes (drained from oil) in 2 tablespoons of oil (reserved from the sun-dried tomatoes jar - see note above) for 1 minute until garlic is fragrant.
  3. Add shrimp, sprinkle with a small amount of salt, paprika, and cook on medium heat for about 2 more minutes.
  4. Add half and half, basil, and crushed red pepper to the skillet with shrimp, bring to boil and reduce to simmer. Whisk the Parmesan cheese into the hot cream and stir to melt cheese, on lowest heat setting, until cheese is melted. Remove the sauce from heat. Add more salt, basil and more crushed red pepper if desired, to taste.
  5. In the mean time, cook pasta according to package instructions. Drain (reserving some pasta water). Add cooked pasta to the creamy mixture, add more salt, basil and more crushed red pepper if desired, to taste.

    Hi Julia!
It seem you have a passion for pasta! πŸ˜€ And you are really good at it! I’m Italian and you still give me some serious inspiration sometimes! This pasta with shrimps looks delicious. I’ll try to make it and hope it will turn out just like yours!

Hello, I’m Emmy and I’ve found your blog quite by accident. I’m surprised by all those delicious recipes I sure going to try. I like that you have the weight measurements in both cup as grams displays. I have a blog: http://creaymme.blogspot.be/ and if I make one of your delicious recipes I will certainly link to your blog.
    Good luck!
    Dear greetings,
    Emmy

  • Daniela May 26, 2015, 2:33 pm

Julia, you seem to read my mind. I was just in mood to prepare some nice pasta and your recipe looks incredibly good. Thanks for sharing.

  • zerrin May 27, 2015, 6:17 am

Love the flavor of sun-dried tomatoes in pasta and I’m sure it makes a perfect match with garlic and shrimp. This one looks so good! Drooling!

  • Calie May 28, 2015, 9:33 am

Your recipe is so wonderful. I think I will try making it for dinner tomorrow. I am quite sure that my family will love it so much. Your blog is perfect to me. Thanks πŸ™‚

This may be a silly question. I have Lactose intolerant eaters in my household. Can I use lactose free milk? Thanks in advance for your advice

    • Tyi June 30, 2017, 2:58 pm

In my experience lactose free milk is a perfect sub for regular milk

  • Marla June 20, 2015, 6:24 pm

I just made this for dinner and it was fabulous!!! Easy and quick and so, so good. Thank you for a delicious recipe!

  • Asma June 25, 2015, 3:47 am

My family isn’t much of a pasta fan but I tried this recipe and it turned out so well and it was so quick to make. I also added a teaspoon of fish sauce to add more flavour. I will be making this again!

  • Hope McLeod June 28, 2015, 8:04 am

Yummy! I have never cooked with sun dried tomatoes but this seems like a perfect recipe to start. I have a family of 7 and this seems like a great recipe that can be easily doubled. Thanks a bunch.

  • Thao @ In Good Flavor June 29, 2015, 3:25 pm

I love shrimp in my pasta. This pasta dish looks and sounds fantastic! It’s so flavorful and with a little kick too.

  • Keisha July 29, 2015, 1:43 pm

Fantastic recipe full of flavor! Was a hit in my kitchen!

  • Deana Buzzy September 7, 2015, 7:43 pm

Supercalifragidelicious! And easy to double as well. The cheese is the key component here! Thank you for the beautiful photo that steered me in this direction tonight πŸ™‚

  • Colleen Laskoski September 8, 2015, 4:14 pm

Thank you for your great recipe! Whole family loved it! Hubby said good enough to be served at a restaurant!

  • Sonny October 21, 2015, 6:39 pm

I am making this right now and the cheese will not melt! It’s clumps

  • Tammy Way October 26, 2015, 5:09 pm

In step #5 of your recipe it says to reserve some of the pasta water, but doesn’t say why or when to use it.

    • The Dude Abides September 1, 2016, 10:31 am

Hi Tammy, anytime I make pasta I keep some pasta water to thin out the sauce should it get too thick while simmering.

  • Sherrie October 28, 2015, 9:53 am

Excellent, easy and LOTS of flavor!

  • Shreyashi Ganguly November 25, 2015, 11:57 pm

    Hey Julia,
This is a fabulous recipe. I have made it a couple of times now and I use your recipe as a template. It has not failed.
I would love to feature your recipe as part of a must try food for the winter months. Who doesn’t love a comforting bowl of pasta which has been given this amount of oomph right?
Anyway, my post will feature you on 1st of December. I will have a picture of your pasta with the proper citations of course. Hope that is alright by you.
    Thank you,
    Cheers!

  • Rebeca November 28, 2015, 9:49 pm

I made tonight after a long 7 hour drive home from vacation. It was not only very easy to make, but was DELICIOUS as well!! Thank you for the fantastic recipe!

  • Olivia December 8, 2015, 6:43 pm

Hi I stumbled on this recipe by accident and decided to try it for supper! I loved it but instead of using half and half I used regular milk. Also I used pre-shredded parm cheese and it didn’t really become creamy. All the cheese stuck to the shrimp and almost became hard /:

    • Dawn daws March 28, 2017, 7:39 pm

I made this tonight and love the flavor! The consistency of mine looks nothing like your pictures though. Mine is very thick and sticky. What did I do wrong? I followed the directions and amounts to a T, but mine is more the consistency of gooey mac and cheese. Would love to make it again if I can make it like your picture!

  • Firozee December 23, 2015, 5:10 pm

Hi you say 1/2-1/2 for milk can you explain what half-half means. Your recipe looks very inviting. Want to try.
    Thanks
    Firozee

    • Susie August 2, 2016, 8:24 pm

Half-and-half is a mixture of milk and cream. It is sold in most grocery stores. Very easy to find. Hope this helps!

  • Diane January 1, 2016, 6:39 am

Made this dish last night. Was perfectly delicious. I may add some broccoli next time to add a little color. I will definitely make this recipe again.

  • greg January 20, 2016, 9:35 pm

I wish Scallions (obviously in the pictures) were in the ingredient list as well as the pasta water instructions.. Im sure its to thin the sauce, but in my first attempt here thinning was unnecessary. Flavor was terrific, for additions one commenter said broccoli and I think that would be dynamite.. I’d cook it first then add at end but I’ll do that next time as well as add scallions. I think you can’t overseas this… More basil would be nice as well as paprika to get the color of the sauce in your photos closer to actual “real life”. But the taste and ease is just great. If the cost of a jar of these tomatoes scares you remember you can basically make four dishes out of it. My house smells amazing and this dish is really delicious. (for the commenter that said their cheese curdled, make sure you have the heat on the barest level and add cheese 1 oz. at a time and really whisk it before adding any more… my dish turned out great). Looking forward to trying more of your pasta dishes!

  • Randi Gielczyk January 27, 2016, 7:20 pm

I just want to say that this recipe was amazing, super delicious and easy to make!

  • Trace Hunter January 27, 2016, 9:12 pm

OMG!!!! I absolutely LOVED this and so did my hubby! It’s a keeper. Thank you for posting the recipe.

  • Nicky January 28, 2016, 7:41 pm

Just made this and it’s so tasty! I added chicken as well as shrimp!

  • Deebi27 February 14, 2016, 8:25 pm

This is going to a Valentine’s Day dinner for my hubby and I! I can’t wait to dig my teeth into it πŸ™‚

  • Jacque February 22, 2016, 2:58 pm

Made this for dinner last night it was awesome! I used large deveined shrimp with the tails on, used heavy whip cream instead of half n half and I added sautΓ©ed mushrooms after adding the heavy whip cream. My husbands comments were ” I think this is the best dish you’ve ever made, I think we should have this every week!”
    Thanks for the great recipe!!

    • Julia June 28, 2016, 11:31 pm

Thank you, I am glad you liked it! πŸ™‚

  • Melanie March 18, 2016, 10:30 pm

I made this for dinner tonight. Like a previous commenter said, my cheese did not blend into the sauce at all, it was just very clumpy. It was freshly shredded. Despite that, this was a super yummy dinner that I will definitely try making again.

    • Julia June 28, 2016, 11:29 pm

If you get clumps in the sauce, make sure to bring the sauce to boil and keep stirring until the cheese melts into a creamy sauce. Add more liquid if needed. If you cook and stir the sauce while boiling long enough (even with the pasta in it) – all the cheese will melt.

  • Barb June 11, 2016, 5:39 pm

I did this with chicken and it was excellant!

    • Julia June 28, 2016, 11:27 pm

I bet it was great with chicken! πŸ™‚

  • Kristin June 29, 2016, 7:04 pm

I’ll be honest, we did not go on point to the exact recipe. We didn’t have fettuccine so used linguine. We could have used sun dried tomatoes, but I noticed our grape tomatoes were looking a like they could wilt so my husband sauteed them instead. I also tossed in some seasoned chicken from a salad I had not finished the day before so we cut the shrimp back and added that. My husband and I use spices without measuring. I think we added extra paprika. The sauce was great and since it’s just us two, we did reduce the portions. All in all, a great mid-week meal!

    • Julia July 1, 2016, 6:36 pm

Thank you, Kristin, I am glad you liked the recipe! Fresh tomatoes always taste great with creamy pasta!

  • Tiffany July 24, 2016, 4:58 pm

Just made this. I wanted to wait to try it with my hubby, but I couldn’t wait. I love shrimp. I love cheese. It is delicious!

  • Ana July 27, 2016, 6:43 pm

This sounds delicious but the photo shows green onions instead of basil. That’s really sloppy.

  • Rahfiki August 3, 2016, 12:49 am

Well I must say that after making this my family has given it the stamp of approval. This dish was “AMAZING” and well worth the work, I followed most of it to the T…but yes being from Jamaica i added my own twist… Thank you for sharing your love for food!

  • Stephanie Snow August 9, 2016, 4:54 pm

Made this for dinner tonight. Absolutely delicious!! So nice to have a recipe that I didn’t feel needed tweaking at all. I followed this one exactly and it’s the perfect mix of garlic, spices and creaminess. Thanks for a wonderful (and easy!) dinner!

  • Daphne Reynolds August 18, 2016, 7:12 pm

This was wonderful. I substituted Spaghetti Squash for the pasta as we are trying to watch carbs. Definitely will make again.

  • Kim August 25, 2016, 10:40 pm

I LOVEDDDDDDDDD the recipe…. It was so delicious and my entire family wanted 2nds!!!!! Thanks Julia for sharing

  • Joanne Bilodeau September 2, 2016, 5:51 pm

Did you use frozen shrimp with the tail still on ? That’s all I’m finding in my area.

  • Valaida Harris September 10, 2016, 5:42 pm

Thank you for the easy meal it was delicious!!!

  • Linda September 22, 2016, 6:47 pm

It was delicious. I would add only half a cup of parm cheese next time. It’s load with flavour.

  • Brandon September 23, 2016, 6:01 am

Hey! I want to make this tonight as it looks so good!! But I have a question and excuse me if this sounds like a silly question, but for the shrimp do you use fresh shrimp or pre cooked shrimp? Thanks for the help!!

    • Alexandra November 20, 2016, 1:36 pm

I have the same shrimp question! Cooked or uncooked, frozen or fresh?!

      • Julia December 17, 2016, 8:45 pm

Use unfrozen uncooked shrimp. If you have to, you can use unfrozen cooked shrimp – it will work here too.

  • Judith September 27, 2016, 8:34 pm

Made this for dinner tonight and its was very delicious! next time I would definitely add some veggies to this and add less half and half.

  • Liz October 2, 2016, 8:01 pm

Made this for dinner tonight & it was wonderful.

  • Cheryl October 9, 2016, 5:27 pm

Made this for my husband who does not care too much for shrimp. We did not have any leftovers. Followed exactly as your recipe said. Awesome. Looking forward to other recipes.

  • Courtney Smith October 21, 2016, 1:49 pm

Easy, tasty, and quick recipe. I added to much red pepper.

  • Kathleen November 21, 2016, 8:07 pm

    This was terrible.
Cheese clumped around the shrimp and never became creamy.
What a waste of shrimp and fresh Parmesan.

    • Julia December 17, 2016, 8:37 pm

Make sure your pan and the liquids are hot enough before adding cheese. Once the cheese is added, keep stirring on low-medium simmer until the cheese is melted, and the sauce is creamy. Increase the heat, if you have to. A lot of time the sauce doesn’t get creamy because your pan is not hot enough or sauce liquids are not hot enough. Hope that helps.

  • Charlene December 22, 2016, 8:43 pm

I just made this. I didn’t have any cheese so I just left it out. It turned out great!!!!! I love spicy food!!!

    • Julia December 22, 2016, 11:31 pm

      So glad you liked it!

  • Brittany December 23, 2016, 10:57 am

I made this recipe yesterday. The only thing I changed was adding a little seasoning to the shrimp. Other than that… I loved the recipe and I appreciate you sharing with us:)

    • Julia January 2, 2017, 11:47 pm

Thank you, Brittany, I am glad you enjoyed the recipe! πŸ™‚

Thank you, Kathleen, I am glad you’ve been enjoying this recipe! πŸ™‚

  • Laurel McClean March 21, 2017, 10:56 pm

I made this for dinner tonight. It was so flavourful, so yummy. I didn’t have paprika and I don’t think it was missed. Thanks Julia!

    • Julia March 29, 2017, 12:46 am

Thank you, Laurel! I am glad you enjoyed it! Yes, I use paprika pretty much for adding a bit of color to this recipe, so if you don’t have it, it does not really affect the flavor.

  • Michelle April 18, 2017, 11:45 am

I use coconut milk if i have it instead of half and half or regular milk.

  • Dani May 4, 2017, 5:26 pm

I followed the instructions, but mine didn’t look anything like the pictures, at all. It tasted pretty good tho, maybe you could upload a video to show step by step how you make it?

  • Debbie May 9, 2017, 8:57 pm

Ewww… I pinned this and tried tonight, what a waste of ingredients!
Cheese didn’t clump, but the flavor was really off, and sauce too thin.
    Deleting this pin NOW!

  • Ste May 16, 2017, 7:40 pm

Thank you for the lovely recipe- delicious!!

  • Thai May 24, 2017, 3:09 am

Hello, I know you said milk is ok, but would you suggest half and half, or does it not really matter? Besides richness?

  • Maritza May 29, 2017, 11:34 pm

Thank you for such a great recipe! The family loved it and said it was a keeper recipe! I added two spoonfuls of cream cheese to the sauce only because I had to use skim milk and it was lacking that creamy factor. Looking forward to leftovers providing it’s not eaten tonight as a snack

  • Gary June 6, 2017, 2:49 pm

    Nice recipe! Really enjoyed.

  • JeNny knott June 16, 2017, 9:55 am

I am disappointed in this recipe. Following the steps exactly, the cheese clumped up on me and clung to the shrimp. The sauce was a runny mess instead of nice creamyness.

  • Holly S. June 20, 2017, 7:54 pm

Yummity yum yum yummers! Used milk and added a tablespoon of cornstarch to thicken the sauce. Extra red pepper. And parmesan never ever melts for me, so next time it goes on top! Thank you for sharing this forever ago!

  • Jenny July 8, 2017, 8:30 pm

I made this recipe tonight and it was amazing! wonderful flavor and so easy, I did not have any trouble with the cheese I whisked it in a little at a time and it melted easily. I used heavy cream instead of half and half and it thickened nicely, I did have to use some pasta water to keep it from getting too thick but it was a delicious recipe!

  • Becky July 25, 2017, 9:32 pm

Made this today & it was amazing and doubled the recipe. Only difference I made was I used half a cup of half/half and half a cup of heavy whipping cream. Just because I prefer heavy cream πŸ™‚ Other than that this is one amazing recipe. Started to follow you on Pinterest for future recipes. Thank you for sharing.

  • Lisa Robinson July 30, 2017, 8:56 pm

Just made and ate this pasta.. SO GOOD!! Like something from a restaurant. Definitely keeping this recipe for future use! Thanks πŸ˜€

  • Alexandria September 27, 2017, 3:40 pm

I absolutely can’t wait to cook this tonight. I originally had another recipe from google, but I came across this photo and said to myself that I have to make this instead! I even had to go back to the store to grab these (your) ingredients. I’m so excited & alittle worried. I’d already bought heavy whipp for the previous recipe, will it be okay to sub heavy whipp instead of half/half or milk. Help!?!?!

    • Julia October 31, 2017, 7:37 pm

Yes, you can use heavy whipping cream instead of half and half or milk, just halve the amount of Parmesan cheese. Use 1/2 cup of freshly shredded Parmesan cheese instead of 1 cup if you use 1 cup of heavy cream, otherwise your sauce will be too thick.

  • Val November 10, 2017, 9:19 am

This is delicious & easy. I will make it again.

    • Julia November 13, 2017, 8:34 pm

Thank you! So happy you liked it!
