Banana bread with walnuts - perfect breakfast and dessert recipe!
This is simply the best recipe I've found so far for the most moist, perfectly sweetened, and easy banana bread. I added walnuts to this recipe, but they are totally optional, even though I love my banana bread with walnuts. This recipe is so easy, you don't even need a mixer - just mix everything with a big wooden spoon!
I've been eating this walnut banana bread for both breakfast and dessert for the past week and just love it!

Banana Bread with Walnuts
Ingredients
- 3 bananas , ripe, smashed
- â…“ cup butter melted
- ¾ cup sugar
- 1 egg beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 ½ cups all-purpose flour
- ½ cup walnuts chopped
Instructions
- Preheat the oven to 350 F.
- In a large bowl, mix butter into the mashed bananas, using wooden spoon. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix just enough to blend the ingredients; do not over0mix, the lumps will work themselves out.
- Add chopped walnuts to the batter and mix them in to distribute evenly through the batter.
- Butter a 4×8 inch loaf pan. Line the bottom of the pan with parchment paper, butter the parchment paper too. Pour the batter in the pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
- Note: lining the bottom of the pan with parchment paper ensures that the bottom of the bread will not get stuck.

Would love to cook this. But I just cant figure out the measurements. Not even with the help of online conversion sites. What kind of cups? US, Brittish, or Australian?
I absolutely detest these silly imperial units. Please join the 21 century and use grams and ml. This is just silly.

Jules--in the U.S. 1 Cup generally refers to a measuring cup equal to 8 ounces. Most people here would not understand a recipe using mls and grams. Just as most people in your country ...such as yourself ..do not understand how to use cups and teaspoons as measurement standards . We have standard measuring utensils using cups and teaspoons and our cookbooks do not use metric as a rule. It's not silly or behind the times for an American cook to use American measurements for her recipe or for you to use metric system... It is just cultural differences. It can be frustrating ..I have trouble with metric system because it was not taught when I was a child....but you can usually find equivalent conversions online.

I save my vegetable cans that can be opened at either end with a can opener. I put my banana bread mix in different sized cans and bake as directed not needing to grease the cans. When the bread has been baked and the cans are cool slide a knife around the edge of the cans to loosen your bread from the sides. Turn the can upside down and open the other end of the can and slide the bread through the can with the the opened cover then slice the bread. The round loaf of bread looks lovely on the serving plate.

Do I need to alter for high-altitude I'm in Denver 5,280.
Someone mentioed that when they followed the recipe it came out like a thick cookie dough.
Once I made another banana bread recipe and I had that happen.
If that does happen. What could I add? Another egg, applesauce, etc?

I made this recipe today! it was so delicious...I added more walnuts than asked for and reduced my sugar by about a 1/4 and used brown sugar instead. The bananas adds so much sweetness by itself. My bread was done in 45 min. So I would check before the 60 min as per recipe. So delicious with a dab of butter and a cup of coffee. Will be my go to recipe.

Thank you, Jill! So happy you liked it! Adding more nuts is always a great idea for banana breads! And, yes, the sugar can be reduced, because ripe bananas are already so sweet. Regarding the 60 minute baking temperature, all ovens are different, my oven at the time might have been less powerful than yours, which is why I baked it for 60 minutes. 🙂
