Banana bread with walnuts - perfect breakfast and dessert recipe!

This is simply the best recipe I've found so far for the most moist, perfectly sweetened, and easy banana bread. I added walnuts to this recipe, but they are totally optional, even though I love my banana bread with walnuts. This recipe is so easy, you don't even need a mixer - just mix everything with a big wooden spoon!

I've been eating this walnut banana bread for both breakfast and dessert for the past week and just love it!

Banana Bread with Walnuts
Ingredients
- 3 bananas , ripe, smashed
- ⅓ cup butter melted
- ¾ cup sugar
- 1 egg beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 ½ cups all-purpose flour
- ½ cup walnuts chopped
Instructions
- Preheat the oven to 350 F.
- In a large bowl, mix butter into the mashed bananas, using wooden spoon. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix just enough to blend the ingredients; do not over0mix, the lumps will work themselves out.
- Add chopped walnuts to the batter and mix them in to distribute evenly through the batter.
- Butter a 4×8 inch loaf pan. Line the bottom of the pan with parchment paper, butter the parchment paper too. Pour the batter in the pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
- Note: lining the bottom of the pan with parchment paper ensures that the bottom of the bread will not get stuck.

Bake at 350 for 45 min. 1 hour will burn it. Make sure to measure temp before you put bread in.

I've used this recipe several times and it's always turned out perfect! I get so many compliments. I tried to make it this morning though and my batter was so dry!! What did I do wrong?
try using 4 bananas vs 3. i always use 4 :)) good luck
If you have applesauce maybe that might help. I see recipes replacing oil or butter with applesauce. Usually to cut the fat.
I wonder if an extra egg would help.
Applesauce idea is great for making breads moist! Also, use bigger bananas, or more bananas or use riper bananas next time to make the bread moist.

If the bread comes out like cookie dough, I assume that it was maybe underbaked? Maybe, the oven temperature should be increased or baking time should be increased. All ovens are different. Or, maybe, add more flour next time?
I just made this an hour ago and it came out looking exactly like the picture! Super flavorful and lovely browned crust. My only recipe change was to add a 1/2 tsp. baking soda and to swap out Kraken spiced rum for the vanilla extract. Definitely will make this a regular recipe. Thanks!

I made this recipe for the office and they absolutely loved it. The bread is moist and with the crunchiness of the walnuts, it's the perfect balance to offset the bananas. When I started putting all of the ingredients together, I realized I didn't have sugar. Instead, I substituted 2 Tablespoons of raw honey. This bread came out perfectly, not too sweet and not bitter at all. Just gooey, deliciousness. Thank you for this recipe. I will be making it again.

this is so good. my dad used to make one when I was little but couldn't find the recipe. this taste the same. I did add lots of chocolate to it which is amazing
Love this recipe it is beyond perfect, BTW if you want bananas to ripen fast just stick them in the oven at 350 for about 15 to 20 minutes. That only works if they are yellow , green ones don't have the same result.
Made this today, I've used my trusty recipe since my sons were babies but today I thought I'd step outside the box and try this one. It's in the oven right now....I'm sure it'll be delicious!

I am certain I followed your recipe to a 'T', and I even used fresh baking soda, yet my loaf is about half the height of yours... Thoughts?
