Chocolate cookies rolled in sprinkles - basic chocolate ball cookies perfect for Christmas!
I love these easy chocolate cookies! They are really perfect for Christmas: so soft and colorful, and they taste wonderful! Am I talking in rhymes again? It happens when I get very excited about cookies! And these little treats are definitely worth your excitement!
These holiday chocolate cookies keep very well in an air-tight container for a week (that's how long they lasted in my house): they don't lose their shape, the sprinkles don't come off, the texture remains amazing even after a week. I so recommend these cookies!
I used a similar method in making these chocolate cookies as I did with vanilla sugar cookies earlier. In fact, on this photo below, I am stacking three chocolate cookies on top of the three vanilla sugar cookies. I highly recommend you make both types of cookies (chocolate and vanilla sugar) at the same time for an easy yet impressive presentation:
Since I was on a baking spree this week, I am going to tease you now and let you know that I also made some chocolate dipped pecan shortbread cookies and chocolate covered hazelnut cookies.
Keep in mind that this type of cookie dough needs to be very cold right before baking so that the cookies retain their nice puffed up shape and don't spread out or flatten out. For that reason, make sure to freeze the cookie dough (already shaped as cookie balls) for at least 30 minutes immediately prior to baking - I talk in detail about it in the recipe instructions section below.

Easy Chocolate Cookies with Sprinkles
Ingredients
- 2 โ cups all-purpose flour
- โ cup unsweetened Dutch-process cocoa powder
- โ teaspoon salt
- 8 oz unsalted butter , room temperature (let the butter from refrigerator sit on the counter for about an hour or so), not melted but softened
- 1 ยผ cups sugar
- 2 eggs
- 2 teaspoons vanilla extract pure
- lots of sprinkles (a whole small container)
Instructions
- In a medium bowl, combine together flour, cocoa powder, and salt and mix.
- In a separate bowl, using electric mixer, beat softened butter and granulated sugar on high speed until light in color and fluffy. Add in egg and vanilla – continue beating for a couple more minutes. Turn off the electric mixer, add flour-cocoa-salt mixture and then continue beating on low speed until well-combined but without over mixing.
- Roll dough into 1-inch balls. Roll these cookie balls generously in sprinkles. Immediately arrange on parchment-lined baking sheets, spacing 2 inches apart and freeze until firm, for about 30 minutes.
- Bake in the preheated oven at 350 degrees Fahrenheit for 14 minutes. Do not over-bake. Remove from the oven, and transfer to wire rack to cool completely.

I made these this week and they were a hit. I used 3/4 cup canola oil in place of the butter. I also had no room in my freezer so I refrigated them for an hour. Mine came out more ball like then disk like but delicious. Thanks!

Arica, so happy you liked these cookies! Good to know that canola oil works well as a substitute for the butter. Whenever cookies come out more ball-like or flatter like a disk it is almost always due to the amount of flour used. I sift and aerate my flour in every baking recipe which might mean that I used less flour than you did, which would explain why your cookies came out denser. They are good either way! ๐

Would it not be better to use a weight instead of a volume for the flour if it's that sensitive? Just curious. I tried to shake up/aerate my flour but the cookies still stayed pretty much in a ball. Only flattened out a tiny bit. They're delicious but I'm not a fan of the ball shape! Your pictures are a much prettier cookie!! ๐

They lasted a week!!!! My goodness, they wouldn't last that long in my house. Mind you I tend to remove temptation and take them into work to share. They are usually gone within half an hour as word get round.
Why have I never thought of sprinkles on a cookie before? It's now on my to-do list.
