    For this recipe, I used fresh pork sausage (uncooked), Jimmy Dean brand, the kind of sausage that comes uncooked in a sausage roll, 16 oz.  I used the regular pork sausage, and the Italian sausage can be used too. I like to use this kind of sausage, because it's flavorful, simple, crumbly and easy to cook.

    Sausage is cooked first, the fat is drained, the diced tomatoes from the can (including the liquid from the can) are added.  Next, cook the tortellini, and add it to the same skillet.  Then, you pretty much combine the rest of the ingredients together. That's how easy it is to make this sausage pasta dinner.

    Ingredients

    • 16 oz Italian pork sausage or regular, fresh, uncooked, I used Jimmy Dean brand
    • 14 oz diced tomatoes
    • ¼ teaspoon crushed red pepper flakes
    • ⅛ teaspoon paprika
    • 2 cups cheese tortellini
    • 2 cups spinach uncooked
    • 1 cup half and half
    • ¼ cup Mozzarella cheese shredded
    • salt to taste

    Instructions 

    • In a large skillet, cook sausage, crumbling it and stirring, on medium heat until done and no longer pink. Drain the fat from the skillet.
    • Add diced tomatoes (with the liquid from the can of diced tomatoes) to the skillet. Add red pepper flakes, paprika. Mix on low simmer.
    • In a separate pan, cook tortellini according to the package instructions. Drain, and add them to the pan with the sausage and tomatoes.
    • Add uncooked spinach, mix. Add half and half, bring to gentle boil, reduce to simmer, cover with lid and let spinach wilt for a couple of minutes, covered. Remove the lid, stir. Bring the mixture to a gentle medium boil. Add ¼ cup mozzarella cheese and stir until the cheese melts.
    • Taste, and add salt, extra paprika, and extra crushed red pepper flakes, if needed, to taste.

      This was so very good! I sauted zucchini and garlic with the mild Italian sausage, extra paprika and mozza as well. I could've had 3 servings!

      I used mild Rotel and sun dried tomatoes instead of diced tomatoes. Also used whipping cream and added orange no and minced garlic. SOOOOOOO yummy! My husband LOVES IT!

          I generally do not recommend freezing cheese-based creamy sauces as they lose their texture when frozen and thawed.

      I just made this tonight but doubled the recipe. We are a blended family of 7 with 5 teenagers! I followed the recipe exactly except doubled the amount of tortellini, and I feel like the meat, sauce, and pasta ratio was perfect! I feel like the sauce would be too much/runny if I didn’t have more pasta. I also used 1lb hot sausage, 1lb sweet Italian sausage. Everyone loved it, and it’s an easy/quick weeknight meal!       I found this recipe on Pinterest and it’ll definitely be in my normal rotation of dinners. So so flavorful and easy! The only tweak I did was add about a half cup of tomato sauce since we like it saucy. Big hit with my picky husband. Thank you!

      My husband works evenings and sometimes I find it difficult to come up with different ideas he can re warm up without the food getting soggy! This is one of our absolute favorites and always a go to. Leftovers are just as good! Thank you for sharing. I’m hoping to find other ideas from you!
