Cilantro-Lime Black Bean Rice - easy, light, delicious, gluten free side dish.
Jasmine rice with black beans flavored with freshly squeezed lime juice and chopped fresh cilantro. Very refreshing, very light. This side dish will go well with grilled or baked meats (chicken, steak, pork), fish or any kind of seafood. It also works great as a stand alone meatless main course.
Easy, simple ingredients, but what a delicious flavor!

Cilantro-Lime Black Bean Rice
Ingredients
- 2 cups chicken broth or vegetable broth
- 1 cup Jasmine rice , uncooked, or use any rice that says on the package that it takes 15 minutes to cook it
- ¼ teaspoon salt
- 4 garlic cloves , minced
- 2 tablespoons lime juice , freshly squeezed (use one 1 tablespoon first, before adding another)
- 15 oz black beans , rinsed, drained, from the can
- ½ cup fresh cilantro chopped
Instructions
- Use large, deep skillet or a large sauce pan.
- Add chicken broth, uncooked rice, ¼ teaspoon salt and minced garlic to the skillet (or pan). Bring to boil. Mix everything well. Reduce the heat to low boil simmer. Cover the skillet with the lid. Simmer for 15-20 minutes, covered, until the rice is cooked through.
- Remove the skillet from heat. Mix in 1 tablespoon of freshly squeezed lime juice, black beans (rinsed and drained), and fresh cilantro into the cooked rice. Taste, and add more salt and/or another small amount of lime juice (at most 1 extra tablespoon, try adding half of extra tablespoon first).
- Note: I think 2 tablespoons of lime juice (freshly squeezed only!) are just perfect, but the lime flavor might be too strong for some people, so you might use just 1 or 1.5 tablespoon instead of 2 that I used.

We loved the rice. I started with 2tbl avocado oil, and sautéed the (basmati) rice, garlic and salt until the rice was lightly toasted. I then added the chicken broth and cooked for approximately 14 minutes. Then folded in the remaining ingredients, using 2 tbl lime juice. A keeper!

Absolutely delicious. Even my boyfriend liked it . The flavors of the lime and cilantro came thru . Not too overwhelming. I only used 1 tablespoon of freshly squeezed lime juice. 2 tablespoons would have been strong for my taste. Rice came out perfect . Followed the package directions.
Was easy & quick to make . Nice summer side dish . Definitely making this again.

If your rice comes out mushy, I've found that it helps to add a dash of olive oil to the water before cooking as well as rinsing the rice very well beforehand!

Very disappointed. This was easy to make but unfortunately it didn’t taste as good as it looked. Even though I cooked the rice like I usually do, it was dry and didn’t have much flavor.

I always use brown rice in recipes. You just have to cook it for 45 min. Cuz it's real food!

I looked at this recipe earlier today and it had shrimp in it but now I don’t see any shrimp in the ingredient list....Luckily I left it up on my computer and it still shows shrimp in it. I made it today with shrimp in it, it was yummy!

I usually make rice in a rice cooker so this was my first time making it in a pot. I followed your recipe to a T and the rice was super under cooked. I continued to cook for 20-30 min more and it still wasn't the consistency I'm used to. Perhaps it needs more liquid?

Yes, you can definitely make this a day ahead of time. Refrigerate in an air-tight container and reheat gently the next day! Maybe add a small amount of water while reheating.

I’m planning to make a large quantity of this dish for a “island” themed couples shower. You know how finicky rice can be!! Will I be okay to make 4 or 5 times the rice ? I will be using one or both Of my large cast iron Dutch oven with good lid and It still come out fluffy? Thanks so much!!
