I recommend using freshly squeezed lemon juice (not bottled) and extra virgin olive oil. Combine all dressing ingredients in a mason jar and whisk with a fork to emulsify.

- Combine spinach, arugula, sliced strawberries, sliced oranges, and crumbled feta cheese in a large bowl. Toss to combine.
- Make homemade dressing by combining honey, Dijon mustard, olive oil, and lemon juice in a mason jar and stirring with the fork until emulsified.
- Add salad dressing to the large bowl with the salad and toss to combine.
- Divide the salad among the individual serving bowls.
- Top each serving bowl with toasted sliced almonds.
Substitutions, variations, and add-ins
- Use your favorite greens or a mix: arugula, spinach, mixed greens, lettuce, butter lettuce, etc.
- You can use other nuts. I recommend toasted pecans, walnuts, or pine nuts. This salad is delicious with toasted pumpkin seeds (pepitas) or sunflower seeds.
- Mix the berries! You can use blueberries, raspberries, or blackberries in addition to or instead of strawberries.
- Cheese. I recommend feta or goat cheese to keep the creamy factor of this salad.

Instructions
Make salad dressing
- Combine olive oil, Dijon mustard, lemon juice, and honey in a mason jar. Whisk well with a fork until emulsified. Or, close with the lid and shake vigorously. Add more lemon juice to taste.
