    This savory cheese log combines cream cheese, sharp cheddar, and Parmesan with olives, sun-dried tomatoes, capers, and roasted cherry tomatoes. An easy, no-bake, make-ahead party appetizer that looks stunning on any cheese board or holiday table!

    Mediterranean Cheese Log (Easy Make-Ahead Appetizer)

    I'll be honest with you: I've made a lot of party appetizers over the years. My festive make-ahead cheese ball has been a holiday staple in my house, and my baked brie with cranberries, pecans, and pomegranate never survives more than ten minutes at Christmas. But this cheese log is the one my family and friends ask me to make again and again. 

    And no wonder why! Everything you love about a Mediterranean spread - the briny olives, sweet sun-dried tomatoes, roasted peppers, capers, the fresh herbs - gets folded right into the cheese.  I use a creamy blend of cream cheese, sharp cheddar, and Parmesan brightened with lemon and herbs. One log, one platter, done.

    What is a cheese log, you might ask? Think of it as the elegant cousin of the classic cheese ball. Instead of rolling the cheese mixture into a sphere, you press it into a loaf pan lined with plastic wrap, chill it until firm, and turn it out into a sleek, sliceable log. The flat top becomes the perfect canvas for a colorful, generous topping. In this case, I add a gorgeous tumble of olives, sun-dried tomatoes, capers, and roasted cherry tomatoes.

    The best part? It has to be made ahead. The cheese log needs at least 2 hours in the refrigerator to firm up (overnight is even better), which means the work is completely done before your guests arrive. If you're like me and you'd rather be pouring wine than plating appetizers when the doorbell rings, this recipe was made for you.

    What Goes Into This Cheese Log

    This recipe consists of 4 components (the cheese log base, savory mix-ins, toppings, and serving ingredients). Here's a quick tour of the ingredients, plus a few notes to set you up for success. For complete recipe instructions, scroll down to the fully printable recipe card below.

    1) Cheese Log Ingredients

    • Full-fat cream cheese (16 ounces) - softened to room temperature. Don't skip the softening step! Cold cream cheese will leave you with a lumpy mixture. Full-fat gives the creamiest, richest texture.
    • Sharp cheddar cheese (2 cups) - freshly grated. I always grate my own; pre-shredded cheese is coated with anti-caking agents and won't blend as smoothly. 
    • Grated Parmesan (¼ cup) - adds a salty, nutty flavor that makes everything taste more savory.
    • Extra virgin olive oil (2 tablespoons) - makes the mixture silky and reinforces the Mediterranean flavor.
    • Lemon zest and lemon juice (1 tablespoon each) - brightens all that rich cheese. They balance the flavors and keep such a rich appetizer from feeling heavy. 
    • Garlic powder, onion powder, dried oregano, dried basil - These are the Mediterranean seasonings that add flavor, color, and freshness! 
    • Kosher salt and black pepper - the capers and olives bring plenty of salt too, so we keep this measured.

    2) Savory Mix-Ins

    • Mixed olives (⅓ cup): Use a variety (green, Kalamata, whatever you love) for the prettiest color and the most interesting flavor. Just make sure they're pitted!
    • Sun-dried tomatoes (¼ cup): Drain them well so the log stays firm. The sun-dried tomatoes add color, contrast, and a slightly chewy texture that works beautifully against the creamy interior. (And save that flavorful oil-we'll drizzle it over the finished log!)
    • Roasted peppers (½ cup): Using a small amount of roasted peppers keeps the flavor balanced and prevents excess moisture from loosening the mixture. Make sure the peppers are very finely chopped and well drained; otherwise, the log can become soft or streaky. 
    • Capers (2 tablespoons): Tiny briny pops of flavor throughout. A couple of tablespoons go a long way.
    • Dried & Fresh Herbs: Dried oregano and basil season the base, while fresh basil and parsley get folded in for color, freshness, and those pretty green flecks. This herb blend also makes the cheese log incredibly versatile and easy to pair with a wide range of crackers and breads.

    3) For the Topping

    • Finely chopped mixed olives (½ cup): Use a variety for the prettiest presentation.
    • Finely chopped sun-dried tomatoes (⅓ cup)
    • Capers (2 tablespoons)
    • Roasted cherry tomatoes (½ cup, about 8): These jammy, blistered beauties are the crowning touch. Roasting your own takes 15 minutes and is completely worth it. See my quick roasting note below.

    4) To Serve

    • Olives (1 cup), sun-dried tomatoes (¼ cup, finely chopped), and roasted cherry tomatoes (1 ½ cups, about 16) - scattered around the log for that abundant, grazing-board look.
    • Fresh herbs - for garnish.
    • Crackers - for scooping and spreading.

    A note on roasting cherry tomatoes: Toss 2 cups of cherry tomatoes with olive oil, salt, and pepper and roast at 400°F for 12-15 minutes, until shriveled but still juicy. Cool completely before using. You can do this up to 3 days ahead.

    Let Me Walk You Through It

    This savory cheese log is genuinely one of the easiest appetizers I make, and the loaf pan trick means you don't need any special molds or shaping skills. The printable recipe card is below, but read on for my tips and tricks!

    • Beat the base. Combine the cream cheese, cheddar, Parmesan, olive oil, lemon, and seasonings until smooth and creamy.

    • Fold in the mix-ins. Gently fold the chopped olives, sun-dried tomatoes, roasted peppers, capers, and fresh herbs into the cheese. Gentle is the key word here-more on that below.

    • Press into a lined loaf pan. Plastic wrap with plenty of overhang is your best friend. Press the mixture in, smooth the top, and wrap it up tight.

    • Chill. At least 2 hours, but overnight is even better. The flavors meld and the log firms up beautifully.
    • Flip, top, and serve. Turn the log out onto a platter, pile on the toppings, surround it with olives and roasted tomatoes, and finish with a generous drizzle of olive oil.

    That's it! Set it out with plenty of crackers and watch it disappear.

    #1 Success Tip: Don't Over-Mix

    When you fold in the olives, sun-dried tomatoes, and peppers, mix just until everything is evenly distributed - and then put the spatula down. I speak from experience here: keep mixing and the colors from the tomatoes and peppers will smear into the cheese, turning your beautiful white log a murky pink. Still delicious, but not nearly as pretty on the platter. A few gentle folds with a rubber spatula is all it takes.

    One more tip: drain everything well. Sun-dried tomatoes, roasted peppers, and capers all carry extra liquid or oil, and too much moisture will keep the log from setting up firm. A quick pat with a paper towel never hurts.

    What Loaf Pan To Use?

    • Use a standard 8½ x 4½-inch loaf pan for the best shape. That gives you a log about 2 inches tall - sturdy enough to unmold cleanly, tall enough to look substantial on the platter, and with a nice wide flat top for all that topping.
    • A 9 x 5-inch pan works too; your log will just be a little flatter, around 1½ inches tall, and slightly longer.
    • The final shape of your cheese log will depend on the loaf pan you use. Most loaf pans hold about 2 pounds, but their dimensions can vary quite a bit. I used a loaf pan that was taller and narrower than the ones I typically use for baking cakes, which gave my cheese log a taller, more dramatic appearance.

    Can I Make This Cheese Log Ahead of Time?

    This is an excellent make-ahead appetizer and is ideal for entertaining, as it requires no last-minute assembly and holds its shape well on the table. Not only do you get a cheese log, but you also have plenty of olives for guests to snack on. It is such a crowd-pleaser.

    What to Serve With a Savory Cheese Log

    • Choose sturdy crackers. I would avoid wafer-thin crackers that will snap under the pressure of scooping through a cheese log (a tragedy, but a preventable one). Crostini, toasted baguette slices, breadsticks, pita chips, and hearty seeded crackers are all perfect. 
    • Veggies: Cucumber rounds, carrot sticks, broccoli, and endive leaves all make wonderful scoopers.
    • Want to build it out into a full antipasto-style spread? Add marinated artichokes, a bowl of good olives, some cured meats if you like, and a glass of chilled white wine or a spritz. Suddenly your cheese log is the anchor of a gorgeous grazing board - and you did most of the work yesterday.

    FAQ

    • Can I shape it differently? Absolutely. Roll it into a classic ball, press it into a festive mold for the holidays, or make two smaller logs and freeze the mixing bowl of stress you avoided. There's no wrong way to shape cheese.
    • Why is my cheese log too soft? In my experience, excess moisture is usually the culprit. Make sure your roasted peppers, olives, capers, and sun-dried tomatoes are well drained before mixing them into the cheese. Giving the cheese log enough chilling time is also important for achieving the proper texture.
    • Why does the cheese log need to chill? I find that chilling is essential for both texture and flavor. The cheese mixture becomes much firmer as it chills, making it easier to unmold and serve neatly. The flavors also have time to meld together, especially if you let it chill overnight.
    • Take it out 15-20 minutes before serving. A slightly softened log spreads beautifully on crackers, while still holding its shape on the platter.
    • Can I freeze it? I don't recommend it - cream cheese can turn grainy after thawing. This one's best fresh from the fridge.

    Ingredients

    For the Cheese Log

    • 16 ounces full-fat cream cheese softened to room temperature

    Savory Mix-Ins

    • ½ cup mixed olives finely chopped, use a variety for color
    • ⅓ cup sun-dried tomatoes finely chopped

    To Serve

    • 1 cup olives
    • ¼ cup sun-dried tomatoes finely chopped
    • 1 ½ cups roasted cherry tomatoes approx. 16

    Instructions 

    • Make the cheese base: In a large mixing bowl, combine the cream cheese, cheddar, Parmesan, olive oil, lemon zest, lemon juice, garlic powder, onion powder, dried oregano, dried basil, salt, and pepper. Beat until completely smooth and evenly combined-no lumps! Room-temperature cream cheese makes this quick work.
    • Fold in the mix-ins: Using a rubber spatula, gently fold in the chopped olives, sun-dried tomatoes, roasted peppers, capers, basil, and parsley. Mix just until everything is evenly distributed. Don't over-mix, or the colors will smear into the cheese and muddy that beautiful creamy base.
    • Shape and chill: Generously line a loaf pan with plastic wrap, leaving plenty of overhang on all sides. Spoon the cheese mixture into the lined pan, then use the back of a spoon to press it down firmly and smooth out the top. Fold the plastic wrap overhang over the top to tightly seal, then refrigerate for at least 2 hours-overnight is best. The longer it chills, the firmer the log and the more the flavors meld.
    • Top and serve: When you're ready to serve, unwrap the top, invert the cheese log onto a serving plate, and peel away the plastic wrap. Top with the chopped olives, sun-dried tomatoes, capers, and roasted cherry tomatoes. Surround the log with the remaining olives, sun-dried tomatoes, roasted tomatoes, and fresh herbs, then drizzle generously with extra virgin olive oil-or, for even more flavor, use the oil from the sun-dried tomato jar. Serve with plenty of crackers.
    • To Roast Cherry Tomatoes: Toss 2 cups cherry tomatoes with olive oil, salt, and pepper and roast at 400°F (204°C) for 12-15 minutes, until shriveled but still juicy. Cool completely before using-warm tomatoes will melt the cheese.

    Notes

    • Cheese: For best results, buy a block of sharp cheddar and grate it yourself. Pre-shredded cheese won't blend as smoothly.
    • Draining Matters: Pat the sun-dried tomatoes and roasted peppers dry with a paper towel before chopping. Excess moisture can keep the log from firming up.
    • Make It Your Own: Swap in marinated artichokes for the roasted peppers, add a pinch of red pepper flakes for heat, or stir in toasted pine nuts for crunch.

    Make-Ahead and Storage

    • Make ahead: Assemble it up to 2 days in advance and keep it wrapped in the loaf pan in the refrigerator. Wait to add the toppings until just before serving so everything looks fresh and vibrant. The roasted cherry tomatoes can also be made up to 3 days ahead.
    • Storing leftovers: Wrap the log (or transfer to an airtight container) and refrigerate for up to 4 days. Honestly, the leftovers spread on a toasted bagel the next morning are a treat all their own.
    • Freezing: I don't recommend freezing this one - the fresh vegetables and cream cheese lose their texture after thawing.
