I blend three whole cups of fresh strawberries right into the filling, so every single bite is packed with real berry flavor. - Crushed graham crackers - Use store-bought Graham cracker crumbs, or crush your own using a food processor. Any variety of cookies can be crushed and used for the cheesecake base.
- Melted butter - binds the crumbs into a crust that sets firm in the fridge. I use unsalted, but salted works too.
2) Filling Ingredients
- Gelatin powder - the key to a no-bake cheesecake that slices cleanly. The gelatin needs to be liquid when added to the other filling ingredients; however, it should not be hot.
- Fresh strawberries - hulled and pureed until smooth. Ripe, fragrant berries give you the best flavor and the prettiest natural pink color.
- Granulated sugar - You can also use superfine sugar here.
- Vanilla extract - You can substitute the vanilla extract with 1 teaspoon of vanilla essence.
- Cream cheese - Full-fat, block-style cream cheese (not the spreadable tub kind) gives the richest, smoothest filling. Let it soften fully at room temperature so you don't end up with lumps.
- Heavy cream - whipped to stiff peaks and folded in for that light, airy, mousse-like texture. Use the cream cold straight from the fridge to ensure it whips properly. Warm cream will not whip as easily.
- Extra whipped cream and halved fresh strawberries - optional, for decorating. Highly recommended for a bakery-worthy presentation!


Let Me Show You How Easy This Is (Step-by-Step Photos)
This is just a quick overview with my best tips - you'll find the complete instructions with exact measurements in the recipe card below.
- Prep the pan. Line the base of a 9-inch round springform pan with parchment paper.
- Make the crust. Combine the crushed graham crackers and melted butter in a large mixing bowl. Press the mixture firmly into the base of the pan (I use the bottom of a measuring cup to really pack it in). Then pop it in the fridge to chill while you make the filling.


- Bloom the gelatin. Add ¼ cup water to a small bowl and sprinkle the gelatin powder over the top. Set it aside for 10 minutes. This step is called "blooming," and it helps the gelatin dissolve smoothly later.

- Blend the strawberries. Add the hulled strawberries, sugar, and vanilla to a food processor and process until completely smooth.

- Melt the gelatin. Microwave the bloomed gelatin for about 20 seconds, until it turns to liquid, then let it cool for 5 minutes. Here's the trick: whisk ¼ cup of the strawberry puree into the cooled gelatin before adding it to the filling. This little step tempers the gelatin so it blends in evenly. No rubbery bits, I promise.
- Whip the cream. Beat the heavy cream on high speed until stiff peaks form. Set it aside - we'll fold it in at the very end to keep the filling light and airy.

- Make the filling. Beat the softened cream cheese until smooth, then add the strawberry puree and the gelatin mixture and beat until silky and well combined, with no lumps of cream cheese remaining. Gently fold in the whipped cream. Folding (rather than beating) keeps all that air in the filling for the creamiest, fluffiest texture.


- Chill. Pour the filling over the chilled graham cracker crust, smooth the top, cover with plastic wrap, and refrigerate for at least 6 hours (preferably overnight).

- Decorate and serve. Release the cheesecake from the springform pan, then pile on the whipped cream and halved fresh strawberries. Slice, serve, and get ready for the compliments.


About the Gelatin and How It Works
Here's what I want you to know:
- Gelatin first needs to be bloomed (softened in cold water) before it's melted (in the microwave oven), and that's exactly what steps 3 and 5 do. Sprinkle it evenly over the water. Don't dump it in one pile, or you'll get rubbery clumps. Then, let it sit for 10 minutes until it looks wrinkly and absorbed.
- The next important step is tempering it before it goes into the filling. Melted gelatin added directly to a cold cream cheese mixture can seize into little strings. That's why I whisk ¼ cup of the strawberry puree into the warm gelatin first. It gently brings the temperatures closer together, so the gelatin blends in seamlessly and your filling stays perfectly smooth.

Success Tips for Releasing and Slicing a No-Bake Cheesecake
- Line the base with parchment paper (step 1!) so the crust releases cleanly from the springform base. To remove the cheesecake, run a thin knife dipped in hot water around the inside edge of the pan before unclipping the ring - this gives you smooth, clean sides.
- For picture-perfect slices, dip a sharp knife in hot water and wipe it dry between every single cut. It takes an extra minute, but each slice will come out with clean layers and no smearing.
- Decorate right before serving. Add the swirls of whipped cream and halved fresh strawberries just before the cheesecake goes on the table so everything looks fresh and glossy.

Variations and Substitutions

Ingredients
Crust:

Instructions
- Line the base of a 9-inch round springform pan with parchment paper. Set aside.
- Combine the crushed graham crackers and melted butter in a large mixing bowl. Press the mixture firmly into the base of the prepared springform pan and transfer to the fridge.
- Add ¼ cup water to a small mixing bowl and sprinkle the gelatin powder over the top. Set aside for 10 minutes.
- Add the hulled strawberries, granulated sugar, and vanilla extract to the bowl of a food processor. Process until the strawberries are completely smooth. Set aside.
- Microwave the bowl with the gelatin for 20 seconds, or until the gelatin has turned to liquid. Set aside to cool for 5 minutes. Once the gelatin has cooled, whisk in ¼ cup of the strawberry mixture until well combined. Set aside.
- Add the heavy cream to a large mixing bowl and beat on high speed using a handheld electric mixer until stiff peaks form. Set aside.
- Add the cream cheese to another large mixing bowl and beat on medium-high speed until smooth. Add the strawberry mixture and the gelatin mixture, and beat on medium speed until smooth and well combined, ensuring no lumps of cream cheese remain. Fold in the whipped heavy cream.
- Pour the filling into the springform pan over the graham cracker crust. Cover with plastic wrap and refrigerate for at least 6 hours, preferably overnight.
- Remove the cheesecake from the pan and decorate with additional whipped cream and halved fresh strawberries, if using, before serving.
Notes
- Cream cheese: Use full-fat, block-style cream cheese and let it soften fully at room temperature (about 1 hour). This is the key to a lump-free filling.
- Pink food coloring can be added to the filling mixture to boost the pink color.
- To easily remove the cheesecake from the springform tin, gently run a butterknife or offset spatula around the inside edge of the tin before gently removing the springform outside of the tin.
- You can also use a 10-inch round springform tin (as opposed to the 9-inch I used in this recipe) to make this strawberry cheesecake.
- I blend the sugar with the strawberries in a food processor in this recipe; however, the sugar could instead be beaten with the cream cheese. Ensure the sugar has dissolved and is no longer grainy before continuing on with the recipe.
- You can use a stand mixer in place of the hand-held electric beaters.
- The flat base of a drinking glass can help to press the cracker mixture into the tin.
- It's very important to add a small amount of the strawberry mixture to the gelatine, as this helps 'temper' the gelatine and ensures it will not lump once added to the cheesecake filling.
Storage Instructions
- Refrigerator: Store leftover cheesecake covered in the refrigerator for up to 4 days. Keep it chilled until just before serving. This is a no-bake dessert, so it softens at room temperature.

- Can I double the recipe? This recipe fills a 9-inch springform pan perfectly. For a crowd, I'd make two cheesecakes rather than one taller one - a deeper cheesecake takes much longer to set.
- Can I use frozen strawberries? Yes! Thaw them completely and drain off the excess liquid before pureeing; otherwise, the extra moisture can keep the filling from setting properly.

- Why is my filling lumpy? Almost always, the culprit is cold cream cheese. Make sure it's fully softened to room temperature before beating, and beat it smooth on its own before adding anything else.
