I'll admit it: I'm the person at the farmers market who buys three times more berries than any reasonable household needs. Every single summer, without fail. It's all because my husband occasionally decides he's going to make fresh smoothies every day... but his enthusiasm never lasts very long.

This time, I ended up with so many extra berries that, instead of filling the freezer with yet another container of unused fruit, I turned them into this mixed berry pie.
Here's the thing about most triple berry pie recipes: they bake the berries into jammy submission. Delicious? Absolutely. But you lose that fresh-off-the-vine flavor and texture.
In my version, the berries stay completely fresh and uncooked. I cook only the strawberry sauce, which acts like a sweet, glossy glaze that coats every berry and sets beautifully in the refrigerator. Cooking just the strawberries concentrates their flavor without watering anything down. Then I simply fold in cups and cups of fresh berries and let the pie chill in the fridge until set. That's it. 2) Strawberry Sauce
- 1 cup freeze-dried strawberries - Ground into a fine powder, freeze-dried strawberries pack an intense strawberry flavor into the sauce without adding any extra liquid.
- 1 cup diced fresh strawberries - Diced and pureed until smooth, these give the sauce its fresh, juicy base. Make sure they're washed, dried, and hulled before dicing.
- 1 cup granulated sugar - Sweetens the sauce and helps it thicken into a glossy glaze.
- 3 ½ tablespoons cornstarch - This is what thickens that beautiful, spoon-coating sauce. Whisk it with the sugar first so it doesn't clump.
- ¾ cup water. Just a little bit thins the sauce to just the right consistency for coating all those berries.
- 3 teaspoons lemon juice, freshly squeezed - A little acidity balances out all that berry flavor. It's what keeps the glaze tasting fresh instead of candy-sweet.

- Bake the crust. Bake the store-bought pie shell according to the package directions until golden, then cool it completely on a wire rack.

- Make the strawberry sauce. Grind the freeze-dried strawberries into a powder, puree the fresh diced strawberries, then cook both with the sugar, cornstarch, water, and lemon juice on the stovetop until the sauce is thick enough to coat a spoon. Cool to room temperature.



- Fold in the berries. Gently fold the fresh strawberries, blueberries, and blackberries into the cooled sauce until every berry is glossy and coated.
- Fill and chill. Spoon the berry filling into the cooled crust, spread it evenly, and refrigerate for at least 4 hours until set.
- Slice and serve. Serve the pie cold, on its own or with whipped cream or ice cream on top.


My Top 5 Tips
- Cool everything completely. A warm crust or warm sauce will make the filling weepy and the crust soggy. Also, hot strawberry sauce will start to soften and cook the fresh fruit, and we want those berries crisp and fresh. Patience here is the difference between clean, beautiful slices and a puddle. I usually make the sauce first and let it cool while the crust cools.
- Dry your berries well. After washing, pat the berries dry with paper towels. Extra water thins out the sauce and keeps the pie from setting properly.
- Sift the strawberry powder. After grinding the freeze-dried strawberries, I like to run the powder through a mesh sifter to catch any little pieces the blender missed. It's a small extra step that gives you a silky-smooth sauce.
- Don't rush the chill time. Four hours is the minimum for the filling to set up so the pie slices cleanly. Overnight is even better.
- Fold gently. Use a light hand when combining the berries with the sauce so the fruit stays whole and picture-perfect.

FAQ (You Ask, I Answer)
- Can I use frozen berries? For the filling, I recommend fresh berries only. Frozen berries release too much liquid as they thaw and will make the pie watery. Save frozen berries for baked desserts like my Mixed Berry Crisp, where they work beautifully.
- Why isn't my pie setting? There are two most common culprits. The first one is that the sauce wasn't cooked long enough to thicken (it should coat the back of a spoon before it comes off the heat). The second reason is the pie didn't chill for the full 4 hours. In that case, give it more fridge time.
- Can I make my own crust? Absolutely! Any fully baked and cooled 9-inch pie crust works here. I just love the convenience of store-bought for this recipe.
- What can I substitute for freeze-dried strawberries? They're worth seeking out (most grocery stores carry them near the dried fruit), but you can skip them if you must. Your sauce will simply have a milder strawberry flavor and slightly thinner texture.

Pie Crust:

Instructions
Prepare the pie crust:
- Position your oven rack in the center of the oven and preheat to the temperature listed on the pie shell packaging. Oven temperatures vary, so I recommend using an oven thermometer for the most accurate reading.
- Bake the pie shell according to the package directions until fully baked and golden. Transfer the pie pan to a wire rack and let the crust cool completely - the crust must be fully cooled before you add the filling.
Prepare the strawberry sauce:
- Add the freeze-dried strawberries to a blender and pulse until finely ground. Transfer the strawberry powder to a small bowl and set aside. I like to run the powder through a mesh sifter first to catch any pieces that didn't fully grind.
- Add the diced fresh strawberries to the blender and puree for about 30 seconds, until completely smooth with no lumps or strawberry pieces. Pour the puree into a bowl and set aside.
- In a medium saucepan, whisk together the granulated sugar and cornstarch. Place the saucepan over medium-low heat, add the strawberry powder, strawberry puree, water, and lemon juice, and stir until the mixture reaches a low boil.
- Once the sauce reaches a low boil, reduce the heat to low and continue stirring as the sauce thickens. Before removing it from the heat, make sure the sauce is thick enough to coat the back of a spoon. Set the sauce aside and let it cool to room temperature.

- Freezing: I don't recommend freezing this pie - fresh berries lose their texture once thawed.
