Bacon Pineapple BBQ Chicken with Red Onions and Mozzarella Cheese - a delicious way to cook chicken breasts and keep them moist, flavorful and far from boring!
If you're looking for an easy pineapple chicken recipe or Hawaiian BBQ style chicken - this recipe is a perfect choice to try! All you have to do is throw 4 chicken breasts into a medium size casserole dish, top it with BBQ sauce, then add diced pineapple, cooked bacon, red onions, and shredded Mozzarella cheese. Bake it uncovered in the oven for about 30 minutes, and your dinner is ready! Your bacon pineapple BBQ chicken will be smothered in a lot of goodness and, therefore, will remain moist and tender which is what we want for chicken breasts.
The result tastes so good! and, no wonder, chicken and pineapple combination is always good, especially when the BBQ sauce is involved. The chicken will look pretty good too, with lots of colors:
This is just like grilled Hawaiian BBQ chicken, but without the need to turn on the grill.
How do you make bacon pineapple BBQ chicken?
Start by adding chicken breasts to the baking dish. It's not really necessary to season the chicken breasts with salt or pepper, as we are about to pile up a whole bunch of flavorful ingredients on top.
Next, top with about 1 cup of BBQ sauce, to cover all chicken breasts. Use more BBQ sauce if needed.
Then, top your chicken with diced pineapple (from the can):
Top with diced, cooked bacon:
Add sliced red onion:
Top with mozzarella cheese:
Bake your pineapple BBQ chicken for 25-30 minutes until the chicken is completely cooked and no longer pink in the center.
Top with diced green onions, and serve:
Bacon Pineapple BBQ Chicken
Ingredients
- 4 chicken breasts (skinless, boneless - use thinly sliced chicken breasts)
- 1 cup BBQ sauce
- 1 cup pineapple diced
- 6 strips bacon cooked and diced
- ¼ red onion sliced (about ¼ cup) + extra
- 1 cup Mozzarella cheese shredded
- 2 green onions diced
Instructions
- Preheat the oven to 375 F. Use thinly sliced chicken breasts
- Add chicken breasts to the casserole dish. Using a spoon, brush chicken breasts with BBQ sauce.
- Top with diced pineapple.
- Add chopped cooked bacon on top of the chicken.
- Top with sliced red onion.
- Top with shredded Mozzarella cheese.
- Bake for 25-30 minutes, uncovered, until the chicken is cooked through and no longer pink in the center. Broil for the last 4 minutes if desired.
- To serve, top chicken with a small amount of extra diced pineapple, a little bit of remaining sliced red onion, and diced green onions.

Loved this recipe idea. The BBQ sauce, pineapple, cheese, and chicken were a delicious combo. I also love cooking my chicken using my Souse Vide machine. So, my modified version of this recipe involved cooking the chicken breasts (Souse Vide) at 140 degrees for one hour. Then I pulled them and assembled in a baking dish with all the fixings and finished at 450 in the oven for around 5 minutes. The chicken was super juicy and the cheese was just a little crispy like I like it. Thanks Julia for the recipe!

What temperature did you set your oven to? When cooking the chicken at 375 F for 30 minutes nothing should've been burnt. I used thinly sliced, skinless, and boneless chicken breasts. What kind of chicken breasts did you use? Bone-in chicken breasts cook longer.

That is why everyone is having a problem with the recipe. You use thinly sliced boneless chicken. Thinly sliced is not mentioned. Please update your recipe to include those two words. Boneless chicken that isn’t thinly sliced is twice as thick.

I totally agree. Specifically need to add THIN CHICKEN BONELESS BREAST. Mine was more than 1/2 raw. I cooked it longer to full cook the chicken, then when it was cooked the topping were burnt on the edges.
Next time pre read your recipe and note EXACTLY what was used to cook your dish.

Mine was completely raw as well. I used normal boneless skinless chicken breats. I think next time I'll leave the cheese off until the end, butterfly the breasts, and double the time.

Mine was ALSO completely raw, I honestly thought it must have been something I did wrong because I have never been good with cooking chicken. Maybe specifically small chicken breast would be ideal, I just used normal boneless chicken breasts as well.

I used thin chicken breasts on a Pampered Chef baking stone. I cooked recipe exactly as stated...used Fresh Market thick and sweet bbq sauce, and moxxarella slices. Since my bacon was a little floppy I sprinkled over last. It turned out beautiful and perfect. I notice that any time I bake chicken if I use a baking stone it is very hard to undercook or overcook the chicken, and chicken stays juicy no matter what. I do not sell Pampered Chef, I just notice these type recipes come out PERFECT when I use it. Anyway, tis was beautiful and my kids loved it. I served it with cold "Hawaiian Mac" - my son's favorite pasta salad. perfect easy beautiful dinner. Thanks!

Followed the recipe to a tee. Cooked for 30 minutes and the chicken was still raw. Baked for an additional 15 minutes to cook the chicken through. Cheese should be added just in the last 5 minutes, IMO.

Excellent!! And here's a tip.. I just put my chicken breasts in the oven and baked them at 375 for about 20 to 25 minutes .. Then I added the bbq sauce, bacon and cheese .. I also used a dash of seasoned salt, garlic and onion powder right when I put my chicken in the oven.. they turned out beautifully, moist and delicious!
I served mine with brown butter rice and grilled corn on the cob.. and to the person that asked if it was good without bacon, of course! But IMO, bacon makes almost everything and anything better 😉

I made this and my husband loved it! I read some of the comments beforehand and I was worried about the cook time....I did two large chicken breasts for 30 minutes and it was perfect. I would probably cook longer and not add cheese until halfway through if I was doing more than two. Either way, absolutely delicious!

Good flavor, was a favorite for sure. The only problem was that it took almost an hour at 375 degrees to fully cook the boneless chicken breasts I used. You might want to revise your recipe to specify thin chicken breasts because anything else is undoubtedly going to take longer.
