    I like to keep white chocolate cheesecakes simple. I top it with a white chocolate ganache to create a beautiful drip effect down the sides, then add swirls of whipped cream and a sprinkle of chopped white chocolate.

    You can also add fresh raspberries, blueberries, or strawberries, a dusting of freeze-dried berry powder (strawberry, raspberry, or blueberry), or a drizzle of raspberry coulis. The tartness of berries pairs really well with the sweetness.

    Ingredients and Substitutions

    I encourage you to read through these helpful notes on the ingredients. As always, you can find full ingredient amounts and step-by-step instructions in the recipe card below.

    • Unsalted butter is what I use for the crust. It binds the graham crumbs and helps them firm up in the freezer. You can also use salted butter.
    • Graham crackers form the base. One full sleeve gives you enough crumbs for a solid, press-in crust. You can swap in digestive biscuits, Golden Oreos (without the filling), or vanilla wafers.
    • White chocolate bars: I used Lindt White Chocolate Bars. I don't recommend using white chocolate chips, as they often contain stabilizers that make them seize or turn grainy when melted. Good-quality bars (Ghirardelli, Lindt, or Bakers) melt smoothly and give the filling a clean, creamy flavor. 
    • Cream cheese needs to be at room temperature before you mix it. Cold cream cheese will leave lumps that don't smooth out, no matter how long you beat it. Set it on the counter for at least 45 minutes before you start.
    • Powdered sugar dissolves into the filling without any grittiness. I don't recommend swapping this for granulated sugar.
    • Vanilla extract: Use real vanilla if you have it. A tiny scrape of vanilla bean paste is even better.
    • Whipped topping:  I used Cool Whip. I fold it in gently at the end to keep as much air as possible. You can use homemade stabilized whipped cream instead by whipping 2 cups of heavy cream to stiff peaks with 2 tablespoons of powdered sugar.
    • Heavy whipping cream. Because the white chocolate is already soft, I didn't use too much cream for the ganache. It loosens the melted white chocolate into a pourable consistency. Don't substitute half-and-half or milk.

    How to Make White Chocolate Cheesecake (Step-By-Step Photos)

    • Prep the pan: Grease a 9-inch springform pan with butter or shortening and set aside.
    • Make the crust: Melt the butter in the microwave, about 30 seconds. Pulse the graham crackers in a food processor to fine crumbs, then pour in the butter with the processor running on low until the crumbs look like wet sand.

    • Chill the crust: Press the crumbs firmly into the base of the pan and freeze 20 min, until firm.
    • Melt the white chocolate: Set a glass bowl over a saucepan with 1 inch of simmering water. Stir the chopped white chocolate until melted and smooth, then set aside to cool.
    • Beat the filling: With an electric mixer, beat cream cheese, powdered sugar, and vanilla until smooth. Mix in the cooled white chocolate, then gently fold in the whipped topping.
    • Chill: Spoon the filling into the pan, spread evenly, cover with plastic wrap, and refrigerate at least 5 hours.

    • Ganache: Microwave the chopped white chocolate and heavy cream in 30-second bursts, stirring between each, until smooth - watch closely so it doesn't scorch. Cool slightly, pour over the cheesecake, and chill 10 min.

    Variations

    • Berry swirl: Fold 3-4 tablespoons of raspberry or strawberry jam into the cheesecake filling just before spooning it into the pan, then swirl with a knife. The tartness balances the sweetness of the white chocolate.
    • Lemon white chocolate: Add the zest of one lemon and a tablespoon of fresh lemon juice to the cream cheese mixture. It brightens the whole thing considerably.
    • Oreo crust: Swap the graham crackers for crushed Oreos (filling removed). The contrast between dark crust and white filling looks striking and the chocolate-vanilla combination works well.
    • Strawberry topping: Skip the ganache and top the set cheesecake with sliced fresh strawberries macerated with a little sugar. Lighter, more seasonal, and very easy.
    • Toasted coconut: Fold ½ cup of sweetened shredded coconut into the filling and press toasted coconut into the top before refrigerating. Pairs naturally with white chocolate.

    Best Toppings and Add-Ons

    This cheesecake is already dressed with ganache, but there's room to go further depending on the occasion.

    • Classic finishes: Whipped cream piped around the border, extra white chocolate shaved or roughly chopped over the top, a light dusting of freeze-dried raspberry powder.
    • Fruit: Fresh raspberries, sliced strawberries, or a simple blueberry compote all work. The acidity cuts the richness of the filling and makes each slice feel less heavy.
    • Crunch: Crushed graham crackers or a few crumbled shortbread cookies scattered over the ganache before it fully sets. Adds texture contrast.
    • Sauces: A raspberry coulis drizzled over individual slices, or a simple salted caramel sauce if you want to lean into the sweetness rather than balance it.

    No-Bake White Chocolate Cheesecake

    Ingredients

    Crust

    • 6 tablespoons unsalted butter
    • 9 graham crackers 1 sleeve

    Cheesecake Filling

    • 13.2 ounce white chocolate I used Lindt White Chocolate Bars: 3 bars (4.4-ounce each), chopped
    • 24 ounces cream cheese room temperature
    • 1 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 8 ounces whipped topping Thawed (I used Cool Whip)

    White Chocolate Ganache

    • 8.8 ounce white chocolate 2 bars (4.4-ounce each), chopped
    • ½ cup heavy whipping cream

    Instructions 

    • Prep the pan. Grease a 9-inch springform pan with shortening or butter and set it aside.
    • Make the crust. Melt the butter in a small microwave-safe bowl for 30 seconds. Pulse the graham crackers in a food processor into fine crumbs, then pour in the melted butter with the processor running on low. Run until the crumbs resemble wet sand.
    • Press the crumbs firmly into the base of the springform pan. Freeze for 20 minutes, or until hardened.
    • Melt the chocolate. Add 1 inch of water to a small saucepan over high heat. Place the chopped white chocolate in a glass bowl set on top of the saucepan and stir until melted and smooth. Set aside to cool.
    • Make the filling. Beat the cream cheese, powdered sugar, and vanilla with an electric mixer until smooth. Pour in the cooled white chocolate and mix until smooth again. Fold in the whipped topping by hand until thoroughly combined.
    • Spoon the filling into the springform pan and spread it evenly. Cover with plastic wrap and refrigerate at least 5 hours.
    • Make the ganache. Combine the chopped white chocolate and heavy whipping cream in a small microwave-safe bowl. Heat in 30-second increments, stirring between each, until melted and smooth. Watch closely so it does not burn.
    • Cool the ganache slightly, pour it over the cheesecake, and chill for 10 minutes.
    • Release and serve. Run a thin knife around the edge, then carefully release the springform ring. The ganache will run down the sides a bit. Transfer to a cake stand, top with whipped cream and extra chopped white chocolate if desired, and serve chilled.

    Notes

    • The cheesecake filling should be completely smooth and lump-free before adding the white chocolate to avoid a lumpy cheesecake.
    • Melting the white chocolate over boiling water is best because it can burn easily in the microwave on its own. Be careful not to get any water on the white chocolate, and watch for steam when you move the bowl.
    • Firmly press the graham cracker crumbs into the pan, ideally with the flat bottom of a glass or measuring cup, to keep the crust intact when you slice the cheesecake.
    • Freeze the crust for the full 20 minutes. It needs to be firm before you add the filling, or it will shift and crack when you spread and press.
    • The 5-hour chill time is a minimum. Overnight is better. 
    • Ganache texture: If your ganache is too thick to pour smoothly, add a teaspoon of warm cream and stir until it loosens. If it's too thin, let it cool a few more minutes at room temperature before pouring.
    • Run the knife around the edge of the springform before releasing the ring. The ganache will have adhered slightly to the sides, and releasing without loosening first can tear the edge of the cheesecake.
    • White chocolate: Use 4.4-ounce baking bars, not chips. Chips contain stabilizers that prevent smooth melting and leave a grainy texture.
    • Cream cheese: Use full-fat brick-style cream cheese at room temperature. Tub-style spreadable cream cheese will not set properly.
    • Make ahead: This cheesecake is best made a day in advance. It keeps in the refrigerator for up to 5 days.
    • Freezing: Wrap tightly in plastic wrap and foil and freeze up to 2 months. Thaw overnight in the refrigerator.
    • Clean slices: Dip a long thin knife in hot water and wipe it dry between each cut.

    Storage Tips

    • Refrigerator: Cover the cheesecake tightly with plastic wrap and store in the refrigerator for up to 3 days. The crust will start to get soggy after that.
    • Freezer: Wrap the cheesecake tightly in plastic wrap and foil. Freeze for up to 2 months, and thaw overnight in the refrigerator before serving.

    I serve this cheesecake straight from the fridge, cold. Let it sit at room temperature for no more than 10-15 minutes before you slice it. Any longer and the ganache softens too much, and the slices lose their shape.

    For a dinner party, I transfer it to a cake stand before adding the ganache and garnishes so it's already plated and ready to go. A warm, thin-bladed knife (run it under hot water and wipe dry between cuts) gives you clean slices without dragging through the ganache.

    How to Freeze White Chocolate Cheesecake

    • Cooling and portioning: Make sure the cheesecake is fully chilled and set before freezing. If you're adding the ganache, let it set completely as well. You can freeze it whole or in individual slices.
    • Wrapping: Wrap the whole cheesecake (still in the springform pan, ring removed) tightly in a layer of plastic wrap, then a layer of foil. For individual slices, wrap each one in plastic, then place them in a zip-top freezer bag. This prevents freezer burn and keeps the ganache from absorbing any odors.
    • Storage time: Up to 2 months for best quality. Label it with the date.
    • Thawing: Transfer to the refrigerator and thaw overnight. Don't rush this at room temperature: the filling is delicate and will weep if it thaws too fast.
    • Reheating and serving: Serve straight from the fridge after thawing. Add fresh whipped cream or garnishes after thawing, not before freezing. The ganache texture may change slightly after freezing, but the flavor holds well.
    • Pro tip: If you want a make-ahead option without committing to a full freeze, this cheesecake holds perfectly in the fridge for up to 2 days before you add the ganache, so you can do it in stages.

    Questions I Get Asked

    1. Can I use white chocolate chips instead of bars? I do not recommend it. Chips are made to hold their shape, which is the opposite of what you want. If chips are truly all you can find, add a teaspoon of coconut oil to help them melt smoothly, and expect a slightly softer set.
    2. Can I use homemade whipped cream instead of whipped topping? Yes. Whip 1½ cups of heavy cream to stiff peaks and fold that in. The filling will be a little softer and I would give it a full overnight chill. That is the method I use in my no-bake strawberry cheesecake.
    3. Why is my filling grainy? The chocolate was too hot when it went in, or you used chips. Both cause the chocolate to firm up into flecks the moment it hits the cold cream cheese.
    4. Can I add berries? Please do. Raspberries and white chocolate are a classic pairing, and fresh raspberries or a spoonful of raspberry sauce over the ganache is beautiful. I make a strained raspberry sauce for my raspberry cheesecake that works perfectly here. Fresh blackberries are lovely too, the way I use them in my blackberry cheesecake bars.
    5. Can I use a different crust? Absolutely. Crushed vanilla wafers, shortbread cookies, or Biscoff all work with the same amount of melted butter. An Oreo crust gives you a striking black and white look.
    6. What if I want a baked cheesecake instead? Then try my blueberry cheesecake or my salted caramel cheesecake, both baked in a water bath with step-by-step photos.
