      Hi Julia,

I just tried to go onto a meal plan, on my exercise app, oh my goodness, it was so bland and repetitive, So back to your meal plans, which are fantastic for all the family, full of flavor and quick to make, keep them coming Julia, you have a real talent.

Thank you so much for this, Ellie. It truly means a lot to me! ❤️ I put a lot of thought into making these meal plans flavorful, practical, and diverse, so hearing that you enjoy them (especially after trying something bland!) really makes my day. ❤️

Tonight, we enjoyed one of your recipes from 2020. I needed a meatless dinner to serve during Lent. We had your MUSHROOM RAVIOLI WITH SPINACH which is amazing.. My husband and I “team cook” - I do the meal planning and the recipe prep and he does the cooking. As a garnish to the already delicious dish, we sprinkled toasted pine nuts and shredded Parmesan cheese. I have just subscribed to your recipes email site and we’re really looking forward to trying more of your recipes. I am wheelchair bound so EASY BUT HEALTHY meals are very important to us. Thank you.

Wow, your comment really touched me.:) Knowing that a recipe from my site made its way to your table and became part of your evening together is incredibly special.

I love that you and your husband “team cook”—what a wonderful way to approach meals. And those toasted pine nuts and Parmesan sound like the perfect finishing touch to that dish.

I’m so glad you’re here and part of the email community now — there are many more recipes coming your way, and I hope they continue to make your meals enjoyable and manageable.

      Hi Julia,

First, I want you to know that my wife and I are devoted Julia’s Album fans. I do most of the cooking in our home, and our evening meals often come straight from your one-pot recipes. Not only are they incredibly delicious, they’re also healthy — which means a lot to us.

That said, I’m still trying to solve the mystery of how your prep times are always about a quarter of mine. I may need to hire a sous chef just to keep up!

We’re preparing for a visit from friends and I’m looking forward to making one of our favorite Julia dinners: the Grilled Salmon (Best Marinade). You once suggested a coconut cilantro-lime rice as a side, but I haven’t been able to find the recipe. We love your cilantro-lime rice and thought the coconut version would pair beautifully with the salmon and salsa.

Thank you for all you do. I can only imagine the time, effort, and creativity it takes to make your work — and your business — such a success. We truly appreciate it.

Hi Phillip! First, thank you and your wife for being such devoted readers — that means more to me than you know!! The fact that your dinners often come from my kitchen to yours is just the best feeling. ❤️

And haha about the prep times — I promise, it’s mostly practice (and must be a little bit of “food blogger speed mode”). When I’m cooking, I’m usually racing the clock because I have to photograph everything before the light disappears, so I’ve gotten very fast at chopping over the years!

But in a normal kitchen, at a relaxed pace, it’s completely normal for it to take longer — and honestly, that’s how it should be!

To make coconut rice: In a medium saucepan, combine 1 1/2 cups of jasmine rice with 1 (14-oz) can full-fat coconut milk, ¾ cup water (or broth), a pinch of salt, and 2 tablespoons of butter. Bring to a gentle boil, then reduce to low, cover, and simmer for about 15 minutes (or according to your rice package timing) until the liquid is absorbed and the rice is tender. You might need to add more water towards the end if the rice isn't cooked. Remove from heat and let it sit covered for 5–10 minutes, then fluff with a fork before serving. You can add 2 or 3 tablespoons of freshly squeezed lime juice and 1/2 cup of chopped fresh cilantro. Season with salt and pepper.

It’s SO good with the salmon and salsa — you’re absolutely right about that pairing! ❤️
Thank you again for such thoughtful, kind words — they truly mean so much to me.❤️ 🙂

      Hi Julia,
When going through and deleted my hundreds of emails a day, I ALWAYS stop and read your recipes! I absolutely love them! When you say “30 minute meal” you are not kidding!!
My family and I really enjoy them! And I love sharing with my friends about how good they are! Tonight I made the sausage, spinach, mushrooms and bow tie pasta. (Not for the first time!) yum!!
I have a pic, but not sure how to post it!
