    Blood Orange Green Salad with Feta Cheese and Honey-Lemon Mustard Dressing

    Blood Orange Green Salad with Feta Cheese, Pumpkin Seeds, and Honey-Lemon Mustard Dressing is a quick and easy recipe that takes only 15 minutes! This healthy salad will pair with any meal! Serve it as a side, or add protein to make it a complete meal. This salad is gluten-free, high in fiber, and meatless!

    15-Minute Everyday Salad

    The recipe features only 6 basic ingredients (spinach, arugula, feta cheese, pumpkin seeds, regular orange, blood orange) and takes under 15 minutes! The salad dressing is made with only 4 basic ingredients (lemon juice, Dijon mustard, honey, and olive oil). Make this crowd-pleaser to serve with your weeknight dinner or as a healthy lunch and snack. If you love oranges, this salad is sure to become one of the family favorites! My other favorite simple salads are pear spinach salad and this beautiful strawberry spinach salad.

    Salad ingredients

    • Spinach is a leafy green vegetable high in fiber and is an excellent source of many vitamins and minerals, including Vitamin A, Vitamin C, Iron, Calcium, Magnesium, and Potassium.
    • Arugula has a peppery flavor that complements the sweetness of oranges. It's rich in Vitamins A, C, and K, and is a great source of calcium, potassium, and folate.
    • Oranges are rich in fiber, antioxidants, and Vitamin C. I used 1 regular orange and 1 blood orange.
    • Feta cheese adds tangy flavor and creaminess.
    • Pumpkin seeds. I used roasted salted kind. If you have raw seeds, I recommend toasting them briefly (about 5 minutes in the preheated oven at 350 F) just until they puff up and turn a little bit brown.

    The Directions

    • Prepare the salad ingredients. In a large bowl, combine spinach, arugula, sliced regular orange and blood orange, feta cheese, and pumpkin seeds.
    • Make the salad dressing. You will need only 4 ingredients: honey, extra virgin olive oil, Dijon mustard, and lemon juice. Add these to a small mason jar and stir with the fork for 1 minute until emulsified! You can use either maple syrup or honey. You can use either fresh lemon or lime.
    • Assembly. Add the salad dressing to the bowl with the blood orange salad and toss to combine. Serve!

    Substitutions, variations, and add-ins

    • Use your favorite greens or a mix: arugula, spinach, mixed greens, lettuce, butter lettuce, etc.
    • You can use other nuts or seeds. I recommend toasted pecans, walnuts, or pine nuts. This salad is delicious with toasted pumpkin seeds (pepitas) or sunflower seeds.
    • Use your favorite kinds of oranges, such as blood oranges, mandarin, clementine, or regular oranges.
    • Cheese. I recommend feta or goat cheese to keep the creamy factor of this salad.
    • Add protein. Add cooked, grilled, or rotisserie chicken or shrimp to this blood-orange green salad to make it a complete meal!

    Storage Tips

    • It's best to serve this fresh salad immediately, so I recommend making just enough so you have no leftovers.
    • If you have leftovers, the salad can be refrigerated for 2 days. It's best to refrigerate the salad and the dressing separately.

    What to serve with it

    This beautiful blood orange green salad will pair well with any main course. Serve it with grilled meats, chicken, steak, seafood, or pasta dishes. Here are a few suggestions, and all of these are 30-minute ONE-POT dinners:

    Ingredients

    Salad dressing

    • ¼ cup extra virgin olive oil
    • 2 tablespoons Dijon mustard
    • 3 tablespoon honey
    • 1 medium lemon freshly squeezed juice

    • 1 large orange peeled, segmented, and sliced
    • 1 large blood orange peeled, segmented, and sliced
    • 4 oz Feta cheese crumbled
    • â…“ cup pumpkin seeds roasted, salted

    Instructions 

    Make salad dressing

    • Combine olive oil, Dijon mustard, lemon juice, and honey in a mason jar. Whisk well with a fork for a minute or 2 until emulsified. Add more lemon juice to taste.

    Assembly

    • Combine spinach, arugula, sliced oranges, crumbled feta cheese, and pumpkin seeds in a large bowl.
    • Add salad dressing and toss to combine.
    • Divide the salad among the individual serving bowls.
