One-Pan Smothered Pork Chops with creamy mushroom, bacon and fresh thyme sauce.  Use boneless pork loin chops.  Everything is cooked in one large skillet.  Easy recipe.  Minimal cleanup. Low carb, high fat, KETO friendly, gluten free recipe.

Smothered Pork Chops, boneless pork chops, how to cook pork chops

    Why make smothered pork chops

    • Tender and moist texture, forget dry pork chop meat. Pork chops are a great cut of meat that can taste really good but they can also be easily overcooked and result in a tough, dry meat. Enter these smothered pork chops. Covered with mushrooms and bacon and a cream sauce with lots of fresh thyme, your creamy pork chops are guaranteed to be tender and moist, and not dry at all. Even if you do overcook them a little, you won't notice it thanks to the creamy sauce.
    • Use only one pan. That's right! You use one pan to make these smothered pork chops which minimizes the cleanup.
    • 30 minutes cooking time. It's a great recipe for a busy person who wants something easy that tastes like comfort food and looks like something from a good restaurant.
    • KETO friendly recipe.  This recipe uses ingredients that are high in fat, high in protein, and low in carb.  Perfect for those who follow KETO diet.  Omit flour for KETO friendly version.
    • Gluten free recipe.  Use gluten free flour to make this recipe gluten free.  In fact, I've made this recipe with gluten free flour because I am gluten free.

    Substitutions

    • I use heavy cream. You can also use cream of mushroom instead.
    • I use regular white button mushrooms. You can also use cremini mushrooms, portobello, shiitake.

Why this pork chop recipe is KETO friendly

    • This recipe contains heavy creamy and bacon. All these ingredients have high fat, low sugar content.
    • Mushrooms are low-carb and a great way to add flavor to keto recipe.
    • Pork chops are high in fat and high in protein, yet low in carbs. A perfect KETO friendly ingredient.
    • Omit the flour.  To make this recipe KETO friendly, simply omit 2 tablespoons of flour for browning the pork chops.

What is also great is that you use only basic, common ingredients to make this dish. Just take a look at this picture. These are all the ingredients that go into this recipe:

Bacon and Mushroom Smothered Pork Chops are not only delicious, they also are great meal to make if you have company. Why? Because they are easy to make. And, because they look amazing, without too much effort:

Side dishes to serve with smothered pork chops

Because there is so much creaminess and so much meat in this recipe, I suggest that you serve simple cooked spinach, or steamed asparagus with this dish.  Or other cooked greens.   Mashed potatoes, or easy scalloped potatoes are also great side dishes to go with these smothered pork chops.  I also suggest that you try this really easy Asiago cheese roasted broccoli recipe - you can roast the broccoli in the oven while your creamy pork chops are cooked on the stove top and you can use any cheese you like, such as Parmesan cheese, not just Asiago.

    Ingredients

    • 6 strips bacon , uncooked
    • 2 lb pork loin chops , boneless (3 or 4 pork chops, depending on size)
    • salt and pepper
    • 8 oz mushrooms , sliced
    • 2 garlic cloves , minced
    • 5 sprigs fresh thyme , just leaves
    • 1 tablespoon olive oil
    • 2 tablespoons flour (use gluten free flour for gluten free version, omit flour to make it KETO friendly)
    • ⅔ cup chicken broth
    • ½ cup heavy cream

    Instructions

    • Chop bacon into smaller bites.  In a large skillet, cook on medium heat until the bacon is cooked. Remove bacon from the pan to a plate, leaving the fat in.
    • Season pork chops with salt and pepper.  In the same pan, on high-medium heat, cook pork chops 4 minutes on each side in bacon fat, until nicely seared. Reduce heat to medium midway through cooking. Remove the pork chops to a plate from the pan.
    • Add sliced mushrooms and minced garlic to the same pan. If needed, add 1 tablespoon olive oil.   Season with salt. Sprinkle with fresh thyme leaves. Cook on medium heat for about 5 minutes, stirring, until mushrooms soften and release juices. Sprinkle 2 tablespoons of flour all over the mushrooms, and stir the flour in on medium heat.
    • Add chicken broth and raise the heat to bring to boil, constantly stirring. You should have a smooth slurry from the flour and the chicken broth. Add heavy cream and stir it in while boiling until everything is smooth. Then reduce heat to low.
    • Add back the pork chops and the bacon. Cook on low heat, covered, until the pork chops are cooked through.
    • To serve, top pork chops with mushroom and bacon mixture and with more fresh thyme leaves.

Very yummy indeed. Thank you. I'm currently trying keto very low carb so I used one tablespoon of coconut flour I just wish it could have been a little bit cremia and not so watery but the flavour was very yummy

Tried this recipe for dinner and oh my gosh! It was so delicious. I always seem to over cook the pork and make it dry but this recipe I was able to cook it just right and the sauce it delicious! I didn’t have the Bay leaves so I didn’t add them also I only used 1/2 tablespoon of flour because I’m trying to eat low carb/keto. But this, I will make again with more mushrooms and garlic. My picky husband loved it as well! I did take a photo of it cooking but not plated because after a long day we were starving! But so delicious! Thank you!!

My family loves this recipe! I do omit the flour and use a little xanthan gum to thicken the sauce.
I also had a time when my grocery order didn't come through as requested, so I to keep my meal plan going, I used lard to sear the pork chops, then used pre-cooked real bacon pieces and canned mushrooms for the sauce... it ended up being an ok shortcut. I love the original recipe best, but wasn't mad at saving a little time and still getting a yummy meal! Thanks so much for sharing!!!

Have made this recipe twice in the last month. Omitted flour for keto and substituted a little xantham gum. Fabulous! Thanks for sharing this recipe.

What did you sun the flour for? I’m new to the Keto eating so I wasn’t sure if I could use something like almond flour or something else? Thanks!

Looks good! About how long roughly do you let the pork chops finish cooking in the sauce after you have seared them? I don’t have a food thermometer.

Cook the pork chops in the sauce for about 10 or 20 minutes - depending on the thickness of your pork chops. I would check the pork chops for doneness after about 10 or 20 minutes of cooking by slicing one of them in the middle. You can also cook the pork chops in the sauce for 10 or 20 minutes, then remove from heat and let them seat covered in the skillet for another 10 or 15 minutes, and then check them for doneness the same way. By letting the pork chops sit off heat covered, they will cook through more gently and not be hard and over-cooked as pork chops tend to get.

Truly the best pork chop recipe I've ever used. My husband isn't a big fan of pork chops typically but couldn't quit raving over these! So moist and delicious....the bacon and mushrooms, delicious!
