Tomato Basil & Spinach Chicken Spaghetti – healthy, light, Mediterranean style dinner, packed with vegetables, protein and good oils. Delicious comfort food!

30 minutes from start to finish! What makes this pasta very special is that in addition to fresh tomatoes, basil, garlic, and spinach, I also used sun-dried tomatoes and red pepper flakes to add lotsΒ of flavor! Β Once the dish is completely cooked, I highly recommend that you add 3 tablespoons of high quality olive oil to stir into the final dish, off heat. It’s so tasty and so good for you!

Tomato Spinach Chicken Spaghetti

Total Time: 30 minutes

Yield: 4 servings

Tomato Spinach Chicken Spaghetti

  • 1/4 cup sun-dried tomatoes, chopped, drained of oil
  • 2 tablespoons olive oil, drained from sun-dried tomatoes
  • 1/2 pound chicken boneless, skinless (preferably, boneless skinless thighs), chopped
  • salt
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 4 roma tomatoes, chopped
  • 1/4 cup fresh basil leaves, chopped
  • 8 oz fresh spinach
  • 3 garlic cloves, chopped
  • 6 oz spaghetti or angel hair pasta
  • (OPTIONAL) 3 tablespoons high quality olive oil or oil from the sun-dried tomatoes jar


  1. Add chopped sun-dried tomatoes and 2 tablespoons of olive oil, drained from sun-dried tomatoes, to a large skillet, on medium-low heat. Add chopped chicken (I used boneless skinless chicken thighs and prefer to use them, but you can use chopped chicken breast, as well), red pepper flakes, and salt over all of the ingredients in the skillet, and cook on medium heat until chicken is cooked through and no longer pink, about 5 minutes.
  2. Add chopped tomatoes, chopped fresh basil leaves, fresh spinach, and chopped garlic to the skillet with chicken, cook on medium heat about 3- 5 minutes until spinach wilts just a little, and tomatoes release some of their juices. Remove from heat. Taste, and add more salt to taste, if needed. Cover with lid and keep off heat.
  3. Cook pasta according to package instructions, until al dente. Drain, and add cooked and drained pasta to the skillet with the chicken and vegetables. Reheat on low heat, mix everything well, add more seasonings (salt and pepper), if desired. Remove from heat.
  4. At this point, when the pasta and vegetables are off heat, you can add more high quality olive oil, which is really tasty. Or you can add more olive oil from the jar from the sun-dried tomatoes.

    I have tried several times to print your recipe for Tomato Spinach Chicken Spagetti without the ad! I finally clicked on the ‘X’ inside the ad box…so with my printed recipe I get a large EMPTY box. Why not a picture of the beautiful cooked dish instead? I know you have to make money to support this site but it would be nice to have a recipe without an ad in it. Will be making this for dinner to ight…ad or no ad. Thanks for such a healthy dish!

      My wife is Italian and on a diet so you can imagine what we are going thru with pasta. I have just substituted for either the whole wheat pasta or the veggie noodles..tastes great and still gives you that pasta feel..just a suggestion

    Just got done eating this and it was delicious! Added a little more garlic, sundried tomatoes, and basil than called for as well as some freshly toasted pine nuts and freshly grated parmesan cheese which made nice additions, will definitely being making again soon!

    This was so delicious!! Will definitely make again. The only thing I changed was to use whole grain pasta to make it even healthier. Loved the sun dried tomatoes and oil…genius…adds so much flavor. Thank you for the recipe!!

    This dish is pure deliciousness. My pickiest eater even came back for seconds and lunch the next day!! The only change I made was squirting a little bit of lemon juice over before serving each plate. Thank you for sharing. I made it a few weeks ago, making it again tonight!! Yummy!!

    This meal was delicious but I just wanted to say that olive oil isn’t good for you it’s just better than other vegetable oils.

    Tried this and it was amazing!!! I used whole wheat pasta, added more sundries tomatoes, more garlic , basil and added Artichoke hearts mixed it in!! Then added Parmesan cheese to top it off OMG Aaammmmazzing!

    I have a serious aversion to sun dried tomatoes…would regular tomatoes work in this?

      Yes, regular tomatoes will work here, however, the flavor would be different, and you would need to add more herbs and probably more salt to compensate for the loss of flavor from not using the sun-dried tomatoes.

    This recipe was delicious! I am a full time student who also works 35 hours a week- this recipe was easy and quick and perfect for my Grandpa and I! We sprinkled a little parmesan cheese to the finished product! This will definitely be made in our kitchen again! We are both excited for our leftovers tomorrow πŸ™‚

    It was loved by all 7. HAD to double recipe. Next time (definitely will be one) I think I’ll add more chicken. Yes absolutely, the olive oil from the sun dried tomatoes made this dish. Such wonderful flavor! YOUR recipe is teriffic just as it is; but, I’m one of those crazy people who likes to put my own spin on it. I added fresh sliced mushrooms, a little sweet onion. Next time I may even try it w/ the spaghetti squash as I have a diabetic brother & he has 2 teenagers w/ juvenile diabetes. I’M so honored they say they’ll eat anything there great aunt cooks, because it’s always so good. LET me say I’m “slow as Christmas” w/ anything I cook (partly due to being ADD, I have to keep reading & rereading the recipe. AT 53 I have grown to love cooking & baking for others; but, I’ve much to learn. THANKS for helping me to cook a delicious & healthy dinner for my family I love so dearly. Everyone got a second & some a third helping. LOL!!

      Great idea to use whole what pasta – definitely makes it a healthier pasta dish! I use gluten free pasta (brown rice pasta) in this recipe, and it works great as well!

    Delicious! I made a vegan version of this, with Beyond Meat, and a little Parma (probably the best brand of non-dairy Parmesan) on top. Great weeknight meal – thanks!

    Absolutely delicious. Couldn’t get to store so substituted Chillie flakes with a teaspoon paprika. Also sundried tomato substituted with 45ml tomato paste but added 2 teaspoons sugar for the acid taste. Topped it with parmesan cheese. Also added a bit of ground pepper.
    Going to try adding mushrooms or bacon in the future.
    Thanks for the recipe it is a lovely tasty dish and is now in my recipe book.
