Tomato Basil & Spinach Chicken Spaghetti – healthy, light, Mediterranean style dinner, packed with vegetables, protein and good oils. Delicious comfort food!

30 minutes from start to finish! What makes this pasta very special is that in addition to fresh tomatoes, basil, garlic, and spinach, I also used sun-dried tomatoes and red pepper flakes to add lots of flavor!  Once the dish is completely cooked, I highly recommend that you add 3 tablespoons of high quality olive oil to stir into the final dish, off heat. It’s so tasty and so good for you!

Tomato Spinach Chicken Spaghetti

Tomato Spinach Chicken Spaghetti

  • 1/4 cup sun-dried tomatoes, chopped, drained of oil
  • 2 tablespoons olive oil, drained from sun-dried tomatoes
  • 1/2 pound chicken boneless, skinless (preferably, boneless skinless thighs), chopped
  • salt
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 4 roma tomatoes, chopped
  • 1/4 cup fresh basil leaves, chopped
  • 8 oz fresh spinach
  • 3 garlic cloves, chopped
  • 6 oz spaghetti or angel hair pasta
  • (OPTIONAL) 3 tablespoons high quality olive oil or oil from the sun-dried tomatoes jar


  1. Add chopped sun-dried tomatoes and 2 tablespoons of olive oil, drained from sun-dried tomatoes, to a large skillet, on medium-low heat. Add chopped chicken (I used boneless skinless chicken thighs and prefer to use them, but you can use chopped chicken breast, as well), red pepper flakes, and salt over all of the ingredients in the skillet, and cook on medium heat until chicken is cooked through and no longer pink, about 5 minutes.
  2. Add chopped tomatoes, chopped fresh basil leaves, fresh spinach, and chopped garlic to the skillet with chicken, cook on medium heat about 3- 5 minutes until spinach wilts just a little, and tomatoes release some of their juices. Remove from heat. Taste, and add more salt to taste, if needed. Cover with lid and keep off heat.
  3. Cook pasta according to package instructions, until al dente. Drain, and add cooked and drained pasta to the skillet with the chicken and vegetables. Reheat on low heat, mix everything well, add more seasonings (salt and pepper), if desired. Remove from heat.
  4. At this point, when the pasta and vegetables are off heat, you can add more high quality olive oil, which is really tasty. Or you can add more olive oil from the jar from the sun-dried tomatoes.

    I have tried several times to print your recipe for Tomato Spinach Chicken Spagetti without the ad! I finally clicked on the ‘X’ inside the ad box…so with my printed recipe I get a large EMPTY box. Why not a picture of the beautiful cooked dish instead? I know you have to make money to support this site but it would be nice to have a recipe without an ad in it. Will be making this for dinner to ight…ad or no ad. Thanks for such a healthy dish!

      Click the add closed, copy paste into a word doc, then print from there 🙂 I even copy the picture and paste it at the top just above the recipe.

    This looks yummy! I bet I could adapt it to paleo with spaghetti squash instead of the pasta. Being Italian, it’s hard to give up my pasta 100%. I can’t wait try it and let you know! Thanks for sharing.

      My wife is Italian and on a diet so you can imagine what we are going thru with pasta. I have just substituted for either the whole wheat pasta or the veggie noodles..tastes great and still gives you that pasta feel..just a suggestion

    Just got done eating this and it was delicious! Added a little more garlic, sundried tomatoes, and basil than called for as well as some freshly toasted pine nuts and freshly grated parmesan cheese which made nice additions, will definitely being making again soon!

    This was so delicious!! Will definitely make again. The only thing I changed was to use whole grain pasta to make it even healthier. Loved the sun dried tomatoes and oil…genius…adds so much flavor. Thank you for the recipe!!

    This dish is pure deliciousness. My pickiest eater even came back for seconds and lunch the next day!! The only change I made was squirting a little bit of lemon juice over before serving each plate. Thank you for sharing. I made it a few weeks ago, making it again tonight!! Yummy!!

    This meal was delicious but I just wanted to say that olive oil isn’t good for you it’s just better than other vegetable oils.
