One-Pan Pesto Chicken and Veggies

Total Time: 30 minutes

Yield: 4 servings

One-Pan Pesto Chicken and Veggies

  • 2 tablespoons olive oil
  • 1 pound chicken thighs, boneless and skinless, sliced into strips
  • 1/3 cup sun-dried tomatoes, drained of oil, chopped
  • 1 pound asparagus, ends trimmed, cut in half, if large
  • 1/4 cup basil pesto
  • 1 cup cherry tomatoes, yellow and red, halved

  1. Heat a large skillet on medium heat, add 2 tablespoons olive oil, add sliced chicken thighs, season chicken generously with salt, add half of chopped sun-dried tomatoes - and cook everything on medium heat for 5-10 minutes, flipping a couple of times, until the chicken is completely cooked through. Remove the chicken and sun-dried from the skillet, leaving oil in.
  2. Add asparagus (ends trimmed), seasoned generously with salt, remaining half of sun-dried tomatoes, and cook on medium heat for 5-10 minutes until the asparagus cooked through. Remove asparagus to serving plate.
  3. Add chicken back to the skillet, add pesto, stir to coat on low-medium heat until chicken is reheated, 1 or 2 minutes. Remove from heat. Add halved cherry tomatoes, mix with the pesto and the chicken. Add chicken and tomatoes to the serving plate with asparagus.

Could this be made with green beans instead of asparagus?

    • Julia June 28, 2016, 6:51 pm

      Yes, definitely!

  • cheri June 4, 2016, 9:20 pm

Hi Julia, loving all the veggies in this dish, looks delicious. Love one pot meals.

    • Julia June 28, 2016, 6:50 pm

      Thank you, Cheri!

  • Katharina June 13, 2016, 1:29 pm

It didn’t turn out as pretty as yours (thanks no thanks to the hungry toddler) but it was utterly delicious. We loved it!! Thanks for another great recipe.

    • Julia June 28, 2016, 6:40 pm

So glad you liked it! Pesto is great on everything!

      • Liliana escobar January 11, 2017, 6:35 pm

What could I have it with? Pasta?

        • Julia January 31, 2017, 12:50 pm

Yes, pasta would be great here, like angel hair pasta will work great here, I think.

  • Diana June 20, 2016, 12:47 pm

    my goodness this was delicious!

    • Julia July 1, 2016, 10:36 pm

Thank you, Diana, I am glad you enjoyed it! πŸ˜‰

This looks terrific – thank you very much!

    • Julia July 1, 2016, 10:37 pm

      Thank you, David!

  • Emily July 5, 2016, 1:33 pm

If I use boneless skinless breast would o need to change anything?

    • Julia July 6, 2016, 6:44 pm

No, you wouldn’t have to change anything. The only thing is to slice chicken breasts into thinner strips (similar to what you see on the photos) and do not overcook them – remove them from the skillet right away, as soon as the chicken breast strips are cooked through.

  • Jewcybabe July 6, 2016, 9:07 pm

Tonight I made this dish for my family and it was a huge hit. Bursting with color, flavor and so nutritious and quick easy to prepare. This recipe is a definite keeper!

    • Julia July 9, 2016, 3:09 pm

Thank you – so glad you and your family liked it! πŸ™‚ This one is definitely one of my favorite dishes right now. πŸ™‚

  • Rebecca Wingo July 7, 2016, 10:39 am

I made this dish just as the recipe says and it was delicious! There was enough left over for my husband to take for lunch the next day. He told me that after he warmed it up the smell of it was attracting his co-workers asking what smelled so good.

    • Julia July 9, 2016, 3:11 pm

Hi Rebecca! So nice to read comments like that! πŸ™‚ I am glad you and your husband enjoyed the dish. πŸ™‚

  • Ron July 12, 2016, 1:31 am

Julia, on another recipe you originated in BHG, you added the nutritional values, kudos, kudos. It was the chicken and broccoli stir fry. Thank you for that. On the above recipe for one pan pesto chicken and veggies, you did not post the nutritional values. What gives? I cook for two college boys who count every calorie they ingest. I’m leaning only to the web sites that list these values. They are important and I know you want us to eat healthy. What gives? Ron.

    • Alex August 30, 2016, 5:19 pm

Dude, use google and calculate it yourself!

      • Kassandra February 28, 2017, 5:56 pm

Agreed. If the boys count calories then they are well aware that myfitnesspal allows you to copy the page link and it will calculate all the nutritional information for them. It was probably quicker to do that than it was to write the comment.

        • Yvonndalona June 11, 2017, 10:59 am

I had no idea that the myfitnesspal did this. Thanks!!!!

        • Melissa August 31, 2017, 8:43 pm

Very good meal…a hit with my family! I was searching for nutritional info & came across the comment about copy & pasting the link in myfitnesspal…I’m so glad to learn this! Thank you Julia for the recipe & thank you Kassandra for the myfitnesspal information!

          • Julia November 3, 2017, 5:54 pm

            Thank you, Melissa!

  • Billie Burke July 14, 2016, 7:26 pm

This was exactly as you said, bright, delicious, perfect meal light meal for summer. It was enjoyed by all. Thank You!

  • Susan July 17, 2016, 2:34 pm

Can you substitute the chicken for fish, thinking of perhaps salmon?

  • Christy K July 19, 2016, 9:53 pm

Absolutely delicious and so easy! I made it on my flat-top grill, which cut an already quick meal by half since I could cook everything at once. Thank you!

  • Angela July 24, 2016, 9:01 pm

This was AWESOME! My husband stopped numerous times throughout our meal and said how delicious it was. Super easy and fresh!

  • Daphne July 26, 2016, 9:36 am

Your instructions under the pictures are different from the recipe. I prefer adding the pesto and tomatoes with chicken as given with photos. Great recipe! Thanks!

  • tanya July 30, 2016, 8:59 am

Wow, this was so simple to make and definitely going into my dinner rotation! Thanks for a delicious, simple and healthy recipe, i am trying the Paprika Chicken with sundried tomatoes next!

  • Leslie August 1, 2016, 11:21 am

Easily prepared and delicious! It’s a great dish for summer, and NO PASTA!! A recipe like this can be served with/without pasta but I prefer rice with the chicken and veggies.
The dish is very adaptable to adding other ingredients for a different “spin” on it.
    Thank you, Julia!

  • tetedeveau August 2, 2016, 9:29 pm

Delicious. Had most ingredients on hand so was super easy. Used snow peas instead of asparagus but any green veggie that cooks quickly should work. Sopped up sauce with a little garlic bread but some pasta or rice would complement it beautifully as well. Will definitely make again!

  • Melissa August 4, 2016, 10:37 pm

This was great!! I added diced bell peppers and onions for my husband. Served over roasted red potatoes & carrots. Super yummy, even husband loved it!

  • Leah August 9, 2016, 5:48 pm

WOW! I just made this for dinner tonight. Easy and delicious. It’s rare I am this impressed with a meal (that I made myself, because let’s face it, everything tastes better when someone else does the cooking!). Thanks for this awesome recipe. I used veggies from the local farmer’s market which made it extra fresh. Served it over angel hair pasta with a little shaved parm. Yum!

  • Marina August 9, 2016, 7:50 pm

This looks yummy and so colorful! I love asparagus

  • Cecilia Kale August 15, 2016, 3:41 pm

I was wondering why when I print this recipe, I get an advertisement instead of a picture of the dish? I know you must have to make money to maintain your pinterest site but an option to X out the ad and have a beautiful picture of the colorful chicken and vegetables would sure be nice.

  • RuLo Mama August 21, 2016, 11:44 pm

Love the ingredients and pictures of this recipe! It’s hard to find gluten free recipes that make the whole family happy but I think my kids will love this one especially the pesto and sun dried tomatoes. Can’t wait to try this one-thanks!

  • Sally September 1, 2016, 7:10 pm

Julia, hi. Just made this tonight and it was great! Substituted green beans (which I’d previously blanched and frozen) and fresh sweet corn cut from the cob for the asparagus. Added some parmesan at the end and served it with Jasmine rice. What a perfect end of summer meal! Thank you so much.

  • Cathy September 6, 2016, 3:47 pm

Can I use sun dried tomato pesto instead of regular pesto

  • Lexi @That Fit Fam September 9, 2016, 3:50 pm

This looks so amazing! I love that you use chicken thighs. I’ve been wanting a new chicken recipe with dark meat! thanks!

  • Edie September 12, 2016, 12:58 pm

My husband made this Saturday night. It was delicious! Having leftovers tonight!

  • Nicole September 26, 2016, 12:12 pm

Made this twice in the last couple weeks. It is so, so good and I’ve added it to my meal rotation! I swapped green beans for asparagus the last time I made it and it was great. The pesto and sun-dried tomato combination is perfect. I served with brown rice. Tonight I am using the leftover chicken and throwing it on top of a salad with some balsamic dressing. Can’t wait!

  • Jen September 30, 2016, 5:48 pm

Just made this for dinner. Definitely a hit in this household! So, so flavorful. Without a doubt this is now on the rotation menu. =)

  • Marci October 6, 2016, 6:38 pm

We just finished eating this. My hubby said “so that was amazing, try more of her recipes!” So excited to check out what other recipes you have!! My toddler was in AWE of the two colors of tomatoes. I have a feeling she won’t want just red tomatos anymore!

  • Christina March 14, 2017, 11:14 am

I’m sad to say I completely forgot to grab pesto on my way out the store door. And my foood is cooking. What’s a good substitute?

    • Julia March 14, 2017, 11:08 pm

Olive oil + fresh basil (or dry basil) + salt to taste, and maybe even a tablespoon or two of heavy cream towards the end.

  • Rachel March 15, 2017, 8:33 pm

Seriously one of the BEST dishes i’ve ever discovered and cooked. Thank you!! I actually am not a huge tomato fan so I substituted the cherry tomatoes for sliced mushrooms, and it was fantastic! I’m gonna be making this again and again~

  • Yasmin March 21, 2017, 7:06 am

I did it for my husband. Really tasty. Maybe we can try this too.

  • Deebi27 March 26, 2017, 3:24 am

OMG…this will be an amazing yummilicious meal! What do you think about using a rotisserie chicken? My hubby likes the dark meat and I prefer the breast. The tomatoes, asparagus and pesto are a total winners in our house! I can’t wait to try this maybe on my next day off…I work nights!

    • Julia March 29, 2017, 12:19 am

Thank you! I am glad you are interested in this recipe! πŸ™‚ Yes, rotisserie chicken will work great here, too! I am thinking the presentation might suffer but the flavor will not! πŸ™‚

  • Ashlie Holt April 3, 2017, 8:50 am

I will admit I am a picky eater, not by choice it’s just some foods make me sick to my stomach. I saw this and my mouth watered instantly! I didn’t wait I went out got what I needed and made it last night! Oh my goodness I was amazed at how delicious it was and easy to make (and that’s coming from someone who doesn’t cook much). Thank you thank you thank you for sharing this yummy recipe!

  • patti April 5, 2017, 8:36 pm

  • Kelly April 18, 2017, 6:30 pm

When I made this dish and my teenage son said, “That was so flavorful”. Yes, he used the word ‘flavorful’. I knew it was a hit! I’m not that great of a cook, and for me to be able to make it successfully, you know it’s easy and delicious, too! Thanks.

    • Julia October 30, 2017, 5:29 pm

So glad you and your son liked it! It’s a pretty easy recipe too, for so much flavor, isn’t it?!

  • Leanna November 13, 2017, 5:09 pm

So my family & I started a low-carb diet and this is my first intentionally-made low carb dinner I’ve made. It was delicious! I will admit, I overcooked the asparagus (still alright & edible) and sun-dried tomatoes (definitely not edible), but despite that, it all came out really great! Definitely a recipe going into my repertoire!
