- 1 tablespoon olive oil
- 1 lb chicken breast, boneless and skinless
- salt and pepper
- 3 cloves garlic, minced
- 2/3 cups heavy cream
- 2/3 cups milk
- 1 cup shredded cheese (use Parmesan, or Mozzarella, or 4-cheese mix)
- 8 oz fettuccine (for gluten free version, use gluten free brown rice fettuccine)
- 2 cups cooked broccoli florets
- 7 strips cooked bacon
- salt and pepper
Instructions
- Heat olive oil on medium-high heat in a large skillet. Season chicken breast with salt and pepper. Cook chicken breast on high heat for 2 to 4 minutes on each side, until browned, then remove the skillet from heat and keep the chicken covered to continue cooking it in its own steam until no longer pink. Remove chicken from the skillet. You can also use pre-cooked chicken. Cut chicken into thin slices.
- Add minced garlic to the skillet. Add heavy cream, milk, bring to boil. Add cheese and stir till it completely melts.
- Cook pasta according to instructions. Drain.
- Add cooked pasta, cooked bacon, cooked broccoli and mix everything in. Season with salt and pepper to taste. Top with sliced cooked chicken.

i made this tonight and it was delicious! all 4 of the family members loved it. i was a bit naughty (because it’s a naughty dish anyway, so i figure: if i’m gonna splurge, splurge BIG!) and used the bacon grease to sautee the garlic and the chicken in. it was so dang good! it does use several dishes to make it though so i wouldn’t do it after work during the week. since it’s so rich, i served it with fresh, tart plums and green grapes.
I am one of “those” people who hate broccoli. Any substitute?? The rest sounds great!!

Use anything you want, so long as it won’t disintegrate while cooking. Zucchini or summer squash would both be good substitutes; just make sure you seed them. Eggplant would also be good. So would spinach; just make sure you chop it up, and add it at the very end and stir it in just until it wilts. otherwise the dish will have a strange taste.
If you haven’t already tried, I’ll bet spinach would be a delicious substitute.

This was So good. I also used a bit of the bacon grease for the chicken but didn’t feel so bad bcuz it had no nitrates it preservatives. And I added a lil bit of butter right before I added the cream. The only thing is that I bought the pre-shreded cheese and its not as creamy will not cut corners next time and I think I’ll use Shrimp & maybe thinner noodles. So many veggies O can’t wait to make it again. Pot Luck!

This was delish! I omitted the broccoli as my family does not eat, but added to my plate once done. I used 2 tbs of butter to olive oil and used the Italian style cheese plus a lil extra parmesan. Definitely will make again.

You can just use 1 1/3 cup of Half and Half instead of the whole milk and heavy cream.

Just in case no one has heavy cream on hand, I substituted 4oz Cream Cheese and it was delicious. I also used Penne vs. Fettucine and Canned Chicken in place of Fresh Chicken, cooked. Half Parmesan and half Mozzarella was what I used. Fresh Garlic, minced, makes a world of difference. βΊοΈ

I made this for dinner tonight-delicious!! I only had some pre-cooked (real) bacon pieces which worked out fine. I didn’t have heavy cream so just used 1 1/3 cups of 1/2 and 1/2. Will definitely make this again!

Looks wonderful! I have been making a carbonara for many years, using all these same ingredients except the chicken. My husband and I have moved to a mostly carb free diet the past couple years. It has always been one of our favorite dishes but the pasta meant being unable to make it. One day it dawned on me to use spaghetti squash in place of the pasta. It works quite well.
Words cannot begin to describe how amazing this is!! ( I’m typing between servings!) The adjustments i made however is that I seasoned my chicken breasts in homemade blackened seasoning, fried them in the grease from the bacon and boiled the noodles in Better then Bullion chicken base and I used mozzarella cheese…..AMAZING!!!! This recipe was kinda blah. The bacon doesnt really add too it. If I were to make it again I would maybe add more sauce. This is a lot of calories for not a lot of flavor.

These instructions are very unclear. A few steps have been left out. As a young mom learning to cook nice meals I found these instructions hard to follow. Please rework these! Great meal though.

Yes, it can. I would probably change proportions and use 1 cup light cream and 1/3 cup milk.

Made this tonight, came out yummy albeit not super flavorful pasta in my opinion. My sauce was kinda lumpy, I’m not sure if the cheese didn’t quite melt all the way (I used pre-shredded parmesan) or if the milk curdled (but I had it on low temp the whole time) but either way still good. Will make again, maybe with some extra garlic.

Made this tonight, This is the BEST Alfredo sauce I have ever had, it truly is wonderful! I used 2 cups of Monterey Jack cheese, 1 cup of mozzarella and 1 cup of the jarred parm. I doubled the milk and heavy cream, then added another 1/2 cup of milk to thin it a bit. A couple dashed of salt and pepper. I did use fresh minced garlic. I used some of the bacon grease from frying the bacon instead of olive oil. I also used 16ozs of pasta instead of 8. My family loved it, it will be made again, most definitely!
