I don’t want to post any “heavy” recipes today, the day after Thanksgiving. Yesterday, I’ve eaten so much of cornish game hens and blueberry pie, I am not even hungry today at 5:00pm. All I want to eat today is something light and not very rich to detox myself after yesterday’s feast. For instance, this arugula salad would not be a bad choice. And, cherry gelatin dessert made from the canned cherry juice works great as a light, butter-free, post-Thanksgiving dessert. I already made cherry gelatin once before after I used canned sour cherries for some recipe and was left with a whole can of cherry juice that I didn’t want to throw away. It’s a great way to utilize that left over cherry juice and at the same time enjoy easy and light dessert.

Cherry gelatin dessert

Juice from 1 can of cherries will make 2 servings in 2 small martini glasses.

Prep time: 30 min


  • 3/4 cup cherry juice from 1 can of canned cherries
  • 3 teaspoons agave nectar
  • 1/2 package Gelatin

Instructions: Heat all ingredients in a small pan on medium heat, mix well until gelatin dissolves. Cool the mixture, then pour it into 2 martini glasses. Throw several cherries into each glass. Refrigerate for 2 hours.
